SUPER EASY Blueberry Lemon Muffins - With a Muffin-Top Hack!

    Recipe:
    Jill’s Blueberry Lemon Muffins
    August, 2023
    These are such delicious muffins! Moist, and delicately flavored with a spark of lemon. Blueberries and lemon are a perfect combination.
    1 ½ cup all-purpose flour
    ½ teaspoon salt
    2 teaspoons baking powder
    ¾ cup granulated sugar
    1/3 cup melted and cooled butter (I used salted butter)
    1 egg
    ½ cup milk
    1 ½ teaspoon vanilla extract
    Juice of medium lemon
    Zest from that lemon
    1 cup blueberries - either fresh or frozen
    Preheat oven to 350 degrees
    NOTE: This recipe does not include the baking hack, as I didn't think it was worth trying.
    Prepare a muffin tin with paper cups or silicone cups.
    In a large bowl, combine the flour, salt, and baking powder. Set aside.
    In a smaller bowl, combine the sugar, butter, egg, milk, vanilla extract. Mix really well. Add the lemon juice and lemon zest. Mix well to make sure all ingredients are well incorporated.
    Add the wet ingredients the flour ingredients. Combine gently until just mixed together. Flour should be slightly absorbed. Now add the blueberries, taking care to not smash them as you mix them in.
    Scoop the muffin dough into prepared muffin tin. Fill to about ¾ full.
    Bake at 350 degrees for approximately 20 minutes. Be sure to do the toothpick test. Poke the toothpick into the center of a muffin. If the toothpick comes out clean, your muffins are done and you can remove them from the oven. If the toothpick comes out with wet dough, the muffin needs to bake a bit longer. Add 2 minutes onto the bake time and check them again. Continue doing this until your muffins are fully baked.
    Remove muffins from muffin tin and place on a cooling rack. Let cook slightly before eating. The blueberries can be pretty hot right out of the oven, and you don’t want to burn your mouth!
    Makes approximately 10-12 muffins
