@@cbreeze123 I am Korean. Miso doenjang and Korean doenjang are completely different. The taste is basic and the way to make it is different. Miso doenjang is Japanese. Korean doenjang is fermented, but miso doenjang is not fermented. That's the difference. Korean soybean paste is much more delicious. But I like both:)
I love how from house to house Korean food is made totally differently, and still can taste different!!! This is one soup I can't live without, and it's one of the first soups my Mother taught me to cook! Unfortunately she likes mine more than hers and I don't get get eat hers anymore😂😂😂

There are so many chili varieties out there. Can you tell me what the green and red ones are called and if you can substitute just in case you can't find?
Sandra Cadet de Fontenay The green one I used on this video is Serrano and the red one is Fresno. :-) You can use from any mild to spicy chili that perfect for your taste!

I saw a couple of videos of this recipe and finally made this using a similar paste as you used here. Unfortunately, I found it too strong for my palate and had to throw away the entire stew. Now I am left with an entire tub of soya bean paste that i will never use..lol I think its an acquired taste, not everyone will enjoy it right away on their first try.

Summer Isabelle Lim Korean soybean paste(Doenjang) is not much different from each others, but each brand has different taste to it. Also old fashioned Korean soy bean pasted is more darker color. But Japanese miso has different colors, which is white, yellow and red. White one has more sweet & taste, red one is more stronger flavor, and yellow one is mixture of both white and red. :-) For this recipe, please use Korean soybean paste- Doenjang. :-)

+hanen Hanou I think she said it was a korean broth, but I don't think you need it because all the other doenjangjigae recipes don't require it. It looks so good though.. lol.
I think it may be a broth that's made out of anchovies I think that's what they're called, kelp and some other ingredients I have heard that you can actually if you don't have that type of broth you can use chicken broth or even vegetable broth so yeah I think just like you know experiment if something like an ingredient you can't find it use an alternative.
Yup it has a pungent smell and taste so it will take you a while to get used to it. Definitely an acquired taste but it is one of my favorite korean soups.

I finally bought a ttukbaegi so i can cook like a legit Korean lol! Its not black like most that i see though... Its like a tan/brown color & it said it is a mud ttukbaegi. Is it still ok to put on the stove?? I couldn't read the packaging -_-'
AliCatt777 There is a few different kinds clay pots out there, so I'm not sure which one you got it by the description I have from your comment. Although most of clay pots are made to use on the stove. But if it's not coated(coated ones are mostly shine looking), you must soak with water for over night. (Fill up the pot with water all the way top and let it sit for over night) :-) If it's coated, you don't have to worry about it!
catips111 It's similar but different. Korean Doenjang has much more fermented dipper flavor into it. If you are going to replace with miso, I recommend red miso. :-)

i got it in the korean section of an asian market and there was a package that said 'mild korean soybean paste' and one that just said 'korean soybean paste' i bought the one that said mild but i couldnt see anywhere online about mild soybean paste.
alexandra d ummmm, I've never seen Korean mild soybean paste before, but I think it still works fine for this recipe. It's probably milder flavor, but doesn't mean flavorless. Next time, if you see the one I used in this video- purchase that one! It's amazing for this soup! :-)

But I want to ask, why U don't add seasoning?
Soybean paste itself functions as a seasoning, so additional seasonings are required in particular. (Of course, you can add some if you'd like to.)
In Lebanese cuisine, we also use that same type of zucchini/squash!

babbiie7 I don't because I add garlic into my stock. If you like garlic, you can add chopped garlic when you add green onion and chili at the end. :-)
