    Church bells start chiming. Philipp: “no noise from 12:00 to 2:30. It’s France, there’s a rule for everything.” Funny but so true! Loved seeing Nathan again and the electronic surveillance is always one of my favorite segments. Anna, your apricot jam looked delicious - you are so talented.     Sometimes I question my IQ while being entertained watching Nathan mow your yard or Phillip cut wood
    The crazy thing though is that when the video is over, I find myself wanting more.
    I love that this is such sweet family show. In so many ways I can relate to the episodes that you share. Trying to herd livestock, cut firewood, make jam raise children, tackling DIY projects.
    These all bring back fond memories of my husband's and my younger years.
    Also I love the humor and really great filming. Thank for sharing your Iives with us.

    What a beautiful family! Loved seeing Anna's parents and brother and his family, the children are precious. Philip's fatherly humor for his daughters is so funny, the peach jam looked amazing and keep the drone shots of the chateau and surrounding grounds coming. The views are spectacular, and I adore the church bells. Excellent episode.

    re. your jam recipe. I learned that you can use the same process of mixing fruit with lemon and sugar to then freeze the fruit in containers or bags. I was surprised that the fruit maintains its texture well without the extra step of cooking the fruit down as with jam. It is also possible to freeze tomatoes whole without blanching them to be used in sauces or other cooked recipes. The tomato skins rub off easily once the tomatoes are slightly thawed or you have run them under some warm water for a few seconds.

    Hi Philipp and Anna, lovely to see your family visiting! The kids have such fun on that trampoline, don't they? Anna, there are easier ways to make jam! The best hints I can give you (from over 50 years of jam making!) are - Freeze your fruit in 1-2kg bags until you need it, and thaw as much as you need at a time. I only make jams etc in the Winter, too hot to do in Summer! It makes the flavour of the fruit more intense and cooks quicker. Don't soak your fruit in the sugar, just bung it in the pot with about 1/2 ltr water per kg, and the juice of a couple of lemons, and let it just simmer for about an hour, or less, just until the fruit is falling apart. Add your sugar (NOT jam sugar - it's a marketing rip off and way too expensive) by measuring the cooked pulp volume cup for cup sugar/fruit. Turn up the heat a bit and add the sugar, stirring, until it's combined, bit by bit. Give it a stir now and again, and it should be ready to bottle fairly quickly, about 10-15 mins from adding the sugar. It starts to go clear as it's cooked. Test by putting a teaspoonful onto a cold saucer, when it's done, you will get a little wrinkle on the jam's surface if you prod it with your finger. Doing the jam like this gives it a lovely colour, and it's got a nice jellied consistency. Bottle and enjoy!! Hope this gives you an easier option, I feel for you standing there waiting for that fruit to soften for hours when the whole lot could have been done and dusted in way less time!     Darling video! Anna, you need a canning funnel. Place the funnel on a jar and use a 4 cup measure that has a spout to add your hot jam to multiple jars. Just move funnel from filled to empty jar. No more multiple ladling for one jar.

      That’s the way my mother did it…with a funnel. Her sterilization of jars was accomplished by inverting them in a large pot of boiling water (10 minutes, I believe)

    Family, friends and fun, all in one video can't beat that. I love the sound of church bells myself. I live in a tiny, tiny town on the shore in Maryland, at exactly 9:45 they ring to let everyone know they have 15 mins to get there. I always picture by gone days with people pulling up every Sunday in their horse drawn buggies.

      @@HowToRenovateAChateau or you could just blend them without cooking. works also really well and saves time. adding a few drops of natural vegetable oil will also help prevent foam from building. and I don't know if you do this, but after filling the jars turn them over so that they create a vacuum while cooling down. prevents the jam from going bad. :)

    Philip, just a suggestion, let the wood you cut, sit for a while to dry. Green wood is much harder to split than aged wood. Remember work smarter not harder! Thank you always for sharing your adventures!

    Philipp is hilarious! I love your sense of humor! My daughters are 40, 36, and 36. We brainwashed them from birth that they could not marry until at least 30. It worked. One us a chiropractor, one a pharmacist, and one an elder care giver. We now have 3 beautiful grandchildren who are also being brainwashed. It works.😇🥰

    6:00. Tips for Jam making… 🍏 🍑 🍏 🍊 🍏 🍒 🍏 🍇 🍏 🫐 I love using unripe apples to make the pectin for jams. Just boil whatever you have of green drops or imperfect unripe apples, strain off the liquid, compost the apples, and use the liquid for you jam making.
    I put the filled jars into a hot water bath to help eliminate air bubbles and finish the cooking of the jam if it is needed.
    I also echo the advice of others who have said: use a funnel for the jam pouring, it goes so much better for speed and efficiency.

    Phillip, stating he will not permit his daughters to go out unchaperoned until they are 34 truly cracked me up.
    This reminded me of my son who is in the police force … calling to let me know that his eldest daughter had been asked to go see a film at the cinema. Much to his dismay, because like Philipp, he told his girls they wouldn’t be allowed to date ‘til they were 26…and Kaila was 14…my son invited the young man to visit before the date and greeted him at the door wearing his full police uniform including his gun.
    As the boy was just 16 and couldn’t drive my son drove them to the film …and sat a distance away in case he was needed🥹😁👀
    Needless to say the poor boy was frightened away …he never asked Kaila out again. 😔

    If you will add one tablespoon of butter to the fruit when you are cooking it down it will remove the foam that forms on top and it doesn’t change the flavor at all.

    Indeed Chestnut branches fall without warning during the late summer and fall as the fruit (nuts) grows. Keeping the tree and branches balance with proper pruning while removing knotted, rotting, and diseased branches reduces the likelihood hood of failure. Thankfully nobody was near the tree. At least you now know not to work under this tree during late summer and fall..... particularly when you can't hear a branch breaking and falling over equipment running or with headphones on.
    Bravo Anna! Your jam looks and according to Phillip taste the part. Well done.

    crack the apricot stones, and use the soft kernels, chopped, in the jam. Adds a gentle almond flavour.

      From food safety of Ireland:
      “The FSAI advises against eating apricot kernels due to the risk of cyanide poisoning. This advice applies to raw, unprocessed apricot kernels and powdered forms of them.
      If you do decide to eat them, you should not eat more than 0.37g per adult per day, which is the equivalent of 1-2 small kernels. Eating more than this amount could cause an acute health risk. Children should not eat apricot kernels. “

    It is so funny to see someone cook marmelade in the traditional french pot meant for exactly that purpose. Years ago my mother brought one back with her from france we stored all kinds of things in it but never used it for cooking marmelade. Nowadays the grandchildren love to play with it and they especially enjoy sitting in it. Also the jam looks really good.

    If French rules stop you from making noise at certain times and days just come to Spain. Here we use to cut wood, let cement mixers run, drill holes in our houses or fell trees all around the clock, Sunday mornings included. And then we burn the leftovers. You would love it.

I don’t know the state of your lawn now. I have noticed as the Vlogs proceed the state of your lawn has deteriorated. It was once lush and green all over. Yellow streaks have appeared.     I love apricot jam, I do most of mine in 6 cup batches so I can reach that jam temp. Looks like a lovely batch of jam.

    The old European way is to layer the fruit and sugar and leave it overnight then when you go to cook it the next morning add your lemon juice. This produces a better quality of jam like marinating meat you can soak it for a couple of hours but for a deeper taste marrinade it over night. I prefer to blitz the fruit in the food processor because of the time factor; this makes making the jam quicker and then add a good handful of sterilized marbles that children play with; this will prevent the jam from sticking on the bottom of the pan and help whilst stirring. To bottle you must leave a 1.25 cm head space in the top of the jar and wipe the rim of the jars with a clean damp cloth or paper towel and seal with the lids and water bath for 10 minutes and turning off the heat and leave it sit undisturbed for 5 minutes, then remove the jars with a jar lifter and place on a towel or board on your bench - never on your bench the jars will explode; and leave to cool completely; as the jars the jars will click and the center of the jars will divite. This is vacuuming if the don't you will have to repeat the whole process to achieve this or follow the helps below. To water bath you put a round cake cooling rack in the bottom of a large stock pot with a lid this will stop the jars from cracking and this is called a trivet - if you are processing small jars like 125 g jars for the breakfast tables or the 50 g jars for individual servings you will need more racks. You put your first layer of jars in the rolling simmering water with the jar lifter add another rack and so forth then place the lid on and let it do its time. You can do the same with pint jars; but when it comes to ltr jars they are best left in a single layer. You need to make sure there is at least 5 cm of water covering the jars at all times and you also need to have a second pot of water at the same simmer in case the water bath needs more water - never top up the pot with cold water, it will drop the temperature and the jars won't wont be vacuumed. If this does happen you have two choices empty the jam back into a pot and get it up to temperature and rebottle into sterilized jars and water bath correctly or put the jam in the fridge for immediate use or in the freezer in snack or sandwich clip seal bags and then placed into a larger clip seal bag dated and placed in the freezer and for when you want it defrost in the fridge over night. The cold sealed jam should be dated and stored in a dark airy cupboard for up to 12 months. Enjoy and yes the bill is in the mail. Ha Ha!

      Would the jarring process be the same for apple butter? Our tree has produced sooo much fruit and the birds and bugs desided that most need a hole added so i need to process them ASAP! Normally I'd just make apple pie filling and freeze is but i dont have freezer space. So i need some jar options. I normally reuse supermarket jars (we make sambal but that doesn't need to be boiled, just sterilized jars and a good layer of oil.) that have been sterilized.

      There are plenty of canners on RUclips. I know a good dozen. When I suggest you go to Homestead heart. Lovely family. She'll even show you how to can butter. That can last for 5 years.

    For future reference if you are inadvertently in this situation again…just get a small pot and make enough for 1 or 2 jars, won’t take long. Just put the lid on the big jam pan and make the rest of the jam the next day.

    I thought your chainsaw pants were ordinary work wear. I had never seen chainsaw pants till I started watching chateau channels - they are not used where I live in the US. Even the tree surgeons just wear jeans. I wonder if green chestnuts can be used for something (like walnuts are made into Nocino?). The family gathering looked so nice out under the trees, happily eating their portions of the glorious "beef" you prepared.     Anna. I thought you did a great job on the jam & your copper pot is everything. If you wanted to add an undertone of warmth to the apricots you could add some vanilla bean paste. It will just add a little something extra beneath the sweetness of the fruit. Continued good luck.
