I’m a chef who’s worked in fine dining all of my career and I’m impressed at the sensibilities of spanians palate. He has a sufficient enough culinary vocabulary, to accurately describe food in a way that’s understandable to a layman.

That egg coffee is amazing. Us Italians have it in the morning with fresh homegrown eggs. My Mum used to make that for us when we were kids for breakfast (without the coffee) finishing off with a tablespoon of Marsala, yes Marsala 😀

one of the craziest things I remember from vietnam was crossing the highway. there is no pedestrian crossing there so you just have to keep walking at the same pace and all the bikes just drive inches infront of you/behind you until your cross. so crazy but it works.
But make sure to stop for cars, they don't play by the same rules
You are a trouper buddy, taking a hit for the boys. Honestly, not Vietnamese staple foods but considered Asian delicacies - like perhaps Kangaroo tails or croc meat is here. But love your willingness to give it a go. Should get them to take you to some of the national or local places renowned for great mainstream local dishes. Also recommend the field-fired fish villagers catch & cook (ca tai tuong chien xu)
