Finally, smoked-pulled pork sliders on BBQ iT!
In this video I make some smoked pulled-pork sliders cooking 2
half-picnics. This is a HOT-N-FAST technique, folks!
-bring your pit up to temp
-add smoke wood, I used POST OAK from B&B Charcoal
-rub ya meat!
-smoke for 3-4 hrs spritzing w apple cider every 2-30 min
-once meat hits 165F (74C) remove and wrap w double HD foil
-return to the pit (no more smoke required now)
-cook until internal temp hits 206F (97C) and remove
-place in a cooler wrapped in a towel for 1-2 hrs
-pull ya pork, DO NOT CHOP!
-add 1-2 cups of warmed apple cider and wrap in the tray for 30 min
-open and serve it up!!

Doing a butt tomorrow and setting up my WSM like a PBC. You've converted me over to B&B. If you get off the island and have a Big Y around try their Tysons Chairman's Reserve pork butts they're a few grades better than the others. I always call the meat counter 1st to make sure they're in stock. Cheers

The bars are part of the ventilation control, by removing them you alter the operation of the PBC, thanks.

Yup, those rods are part of the proper airflow design. Remove if you want less smoke, or fill holes w foil or a magnet. But no, you just don't remove for the hell of it.
