lots of rackets still have a wooden frame, water/sweat coming into contact with the wood will cause it to swell and be uneven. So yes, electrical tape is good
Starting with the tapered end IS the conventional way. Personally I start with the fat end...I have the world's largest collection of unused finishing tape!

Do you not remove the old grip first, then apply the new one?
Not with an OVERgrip. (although I have also seen people apply them directly on the wood for a super thin/hard grip)

you would not have to cut the grip, if you have install it otherway around. Isn't that the correct way >?
