    No I’m from Sichuan. Although people don’t do an order for what food goes in first. But I think it’s best to put in meat first, because veggies really absorb all the spicy oil in the broth. If I put veggies especially leafy veggies first, the oil will be gone and veggies will taste super spicy. So basically veggies go after meat. Then starchy food at very end so the broth is not gonna be super thick and burning at bottom.

    From Chengdu, Sichuan, I am actually so impressed on many levels about this guy! The hot pot looks very authentic, including the ingredients and the fact they use sesame oil as dipping sauce (not every Chinese knows this, only in Sichuan). What is more, they improved the hot pot experience for western customers by introducing a well selected sets of food material, very friendly and the food presentation is also on the top level compared with hot pot restaurants in Sichuan. Well done, hats off !

      It's pretty good. I actually prefer the northwest hotpot to the Sichuan hotpot though. We have mutton, potatoes, and generally a little heartier food in northwestern hotpot. (I live up in Qinghai.)

    First We Feast. I don't know who is making the calls around your office but god damn are you guys killing it.
    It may not seem important, but I love the fact that you guys use someone who is actually Chinese to introduce the dishes. It truly is the best way to present and share food from other cultures.
    Of course, food is meant to be shared, but nothing annoys me more than seeing some white hipster guy telling everyone how they eat ramen or some shit.
    Thank you for giving a platform for some new faces! Good on you for doing it right!

      Trunkyfee I loved how he emphasized that everyone has their own ways of doing hot pot. I feel like whenever someone who doesn't understand the food but is telling us how to eat the food is telling us that the way we eat it is wrong.

      Brandon Chan yeah i really wish they tied all of the dried herbs and chilis on top in some cheese cloth, ive taken bites of numbing peppercorns before and its not pleasant

      on a serious note.... and it took me years to realize... bake them in the oven or toaster oven.... the time it takes is ridicously long but if you can put down the bong for a couple of minutes its worth it

    The Chiang Mai hot pot is good too. Biggest difference is thre is a chimney in the center and the soup is in a ring around the lower part and there is a bbq rack to cook some of the meats..

    I've had this lemon grass soup that had pork blood in it at this pho restaurant(Vietnamese) not gonna lie tasted crazy! The waiter asked if I wanted the pork blood in it I said yes, had the biggest smile on his face not sure if it's because he thought I was in for a surprise or because not many people get it but I'll never forget that flavor lol.

    This is awesome! I remember living in Cheng Du and eating this in a much bigger pot and it was so cold in China (like you could see your own breath and the thought of a hot steaming pot in front of you face would be heavenly because you’re so damn cold!) and when the beef fat would hit the table it would butter up instantly!
    This was so cool I thought and the flavor was TO DIE for!!! (Of course drinking lots of píjiŭ made the experience better and more delicious!)

    Nice video! If I was in town, I'd love to try your hot pot. Anyway, I've been working and living in China for almost 15 years and currently living in Chongqing for the last 8 years. Chongqing is the birthplace of hotpot and at almost every corner, there is a hotpot restaurant. Compared to Chengdu style, Chongqing hotpot is more spicy and numbing. Chengdu hotpot tends to be a bit more sweet. Sadly, I'm currently trying to lose weight and at the same time control my gout attacks (lots of purines from the soup, meat and organs) so hotpot is on hold for a while. I do miss it heavenly. As for my Chongqing wife, she cannot live without hotpot. She needs to eat it at least once a week! Until my health gets better, I'll be dreaming of my next hotpot meal. :)

      Mikey would have done better tho. Even tho he is sooo stingy and tight wadded sometimes. I mean. Why cant he w a little bit of his RUclips money. Buy his hosts street foods too. He made me soo mad w that poor guy over sime mexican kind if hot pocket. He paid like 10€ for it or close to it and then couldnt hardly stand to give the man the empty pinched off portion of ine the pockets. He is sooo greedy sometimes.     Really would like to try it because chinese cuisine is much more complex and deep than what the majority of people think. But as a lover of spicy and hot food i'd really like to try it to see if all those hot peppers don't cover the different taste of all the different meats ( let alone make your mouth so hot it becomes numb!). Great video always beautiful listening to somebody so passionate about what they do. Enriching!!

      Generally with Sichuan style it'll cover it up. But if you go other places and get the spicy broth, you can taste more flavors. But the real important part is the dipping sauce (which is where the most flavor comes from) which varies from person to person, but usually consists of sesame paste, oil, and hot chilli oil, plus more condiments.

      If you are a true lover of spicy food, your tolerance would be so high that you could barely feel the heat in this. Heat doesn't cover flavors for me, the opposite really. I can't taste things usually without some heat to wake up my taste buds.

    I love to cook and this seems right of my alley on Asian cuisine of something I'd love to experience/learn about to become good at. They give you everything and you just cook your own things in a broth, so amazing. I'm curious if there's something like this around Houston, Texas I'd go there quite a bit if it wasn't too expensive!

    In Xi`An you have this dish with noodles, a whole fish in the hotpot, leaves from plants you never heard of and meat such as oxtail.

    i live in Australia and usually go to Chatswood (a CBD near Sydney) to eat hotpot but it is a bit different to this. you just choose ingredients and then like 15 minutes later they bring out this massive bowl full of hotpot but nothing on the side.

    Just for the record, hotpot is originally from Chongqing instead of Sichuan or Chengdu!!!!! As a proud Chongqingnes myself, I'll take the credit for it :)

      Sure. People can usually order the type of meat they would like to have. If you don't like internal organs, you can always order plain meat.
