Another parking place similar to a hospital is at any large nursing home. Staff in and out at night time, some use agency staff, so strange vehicles are not even noticed most of the time.
I make lots of Thai curry. An old thai chef taught me to caramelize a little bit of onion in the pan first and then add just the paste to the pan. After a minute or so add the coconut milk. cooking the paste a little first helps and caramelized onions add natural sweetness. Traditionally a small amount of (palm?) sugar is put in at the end of the cooking process.
I love the open freedom of van living. I love the adventure. What I don't love is the uncertainty. Van living + cooking + an ever changing scenery makes it all so very awesome. I can romanticize it if I want to but I fear that one day I would be stuck in a bad spot I cannot get out of.

So I'm thinking about this lifestyle, but a question that keeps coming up for me is where do you cook? Do you go to parks, what about winters I mean you can't cook in your car right. I can't eat out every day
I was living in a car for 5 months, and then I bought a 19 foot cargo van and lived in it for another 9 months. I tried it and in the end I did not like it. Yes you save money on rent, but, at some point, I realized that I am not going to live forever and I want to live better than that with the time I have left on this planet. I am thankful that I have resources and I was not stuck in that situation. I see the same cars parked at the Planet Fitness parking lot and I know there are people not as lucky as I am. I was in transition finding affordable housing and I just was not going to piss away my inheritance money and savings staying in a motel room every night.
Usually Wal-mart where I am at don't really care, but I guess it is California where there are a lot more people that does this so they have had issues with it. I also think your car is so inconspicuous compare to a van or larger vehicle.
when I pick my spots --- i try to do it on the side of a house or on a corner where nobody is going to walk right out and see my car in the morning --- dog walkers are always an issue....and yeah you don't want to be parked alone you want to blend in.....I don't use curtains b/c I don't want attention.

Thank you! It was a beach parking lot. I don't think anyone had a problem with it. A city employee/ security guard drove right by me and didn't say anything. There were also a few RVs parked in the lot! I usually cook in those types of parks.

I pop the sun roof occasionally but usually don't open windows for air flow. I do try to leave earlier to avoid encounters, but sometimes sleep in anyways!
I used coconut milk with red curry paste. I then added a sliced red pepper, green pepper, can of bamboo shoots and some tofu. Cooked it for a few minutes in the nonstick pan and it was ready to go!
I tried it this evening and for some reason the flavor of the sauce seemed off. I mixed coconut milk with red curry paste just like you said but it tasted more like tomato soup than curry. Did you use any other spices with it?

Can't believe no one complained about you cooking and sleeping by the side of the road in a residential area. Your car looks packed and somewhat of a fire hazard. How would you get out if something happened or get away if someone tried to get in? Just looking at all possible scenarios. I am just wondering how any days a week do you cook a full meal like you did. I understand you have limited space for ingredients and left overs in your fridge.
Usually once or twice a week. I'll have enough leftovers for two or three days after each cooking session. I do need to finish the previous leftovers though before I can cook another meal! My fridge is relatively small.
Metal utensils scratch away at the teflon coating on cookware. Teflon is what keeps your food from sticking to the pots and pans, so scratching it off makes it a nightmare to cook and clean. Silicon utensils are probably your best bet.
william moore What about those wooden ones? I thank you for pointing out the teflon thing, as you might guess, I don't know too much about cooking, but I am looking for a road trip cooking solution as well, and hopefully as space saving as his.
Wood should be perfectly fine. Another thing to note is using the rough side of a sponge has a similar effect to the teflon. You should be able to easily remove any food from your new pan using the soft side. The reason it gets harder to clean is from using the wrong side of your sponge.
gotta love being able to cook. you hear homeless people complaining all the time about not being able to eat or not having food. not all jobs require a physical adress and while you work those you can save up for a camper or van. once you have that you can sleep with a bit more ease and comfort. and if you have a brain you can set up a shower area with a camp shower bag. (walmart) then your clean...well rested. get a propane stove top for cooking. your well fed. now you get your second job amd save every freaking penny. guarantee short of a vehicle failure. you will be back in a place in 2 months topz

If you want to be efficient with cooking rice you can boil for about 10 minutes and take it off the heat and let it steep with the lid on.

Good job, curry are real easy to make if you use the pre-made spices, and you can store it and eat it for more than one meal with rice.

The bed setup process seems cumbersome and I'd rather just eat out unless I'm camping in the forest but it's really nice how you make it all work.
