  • This is a short demo on how I make bread dough according to Mamaw Wilson's recipe - our 102 year old grandma. Note, the dough is very sticky with a 68% wetness ratio and no kneading. After the steps in the video, I covered the bowl with a large plate. Two hours later, I preheated to oven to 200°C (400°F). I punched down the dough. The dough is much less sticky now. Still, I put olive oil on my hands, pulled off little golf-ball-sized dough balls, and placed them on an aluminum cookie sheet - a little flour, semolina, or corn meal will help keep the baked bread from sticking. I didn't use any and it turned out reasonably well (two minutes to wash the pan to a brand new looking condition). Delicious and chewy - bread flour makes them even chewier. A sprinkling of salt while they're still hot adds a saltiness that goes right to the tongue where it's needed while minimizing your sodium intake.
