Love these tea staining chats. Hope the bread works out. I also hate cleaning. I watched my non-ADHD sister clean once. She is very efficient and it doesn't take her long because she focuses on one thing at a time. My cleaning looks more like - sees a plate and goes to put it in the dishwasher but wait! There's that can from last night's dinner and it's dry. Leaves plate on counter and takes can to recycle bin. Sees a piece of paper in the recycle bin that should be shredded. Grabs it and takes it to the office to be put in the shred pile. Sees a sweater that needs washing on the chair in the office..... okay you get the picture. Happy New Year! Hopefully this one will be much better. 🙂

You are the 1st person I have seen on YT of the MANY videos about coffee/tea dying paper to address the importance of neutralizing the acid. We all have been buying acid free paper supplies for so many years, so it seems like more people would understand the importance 🤷‍♀️ Anyway, thank you for always being so thoughtful & thorough. That sheet is pretty awesome, btw. Yes, please let us know how your bread turns out. I made sourdough & slow rise bread for years & found it much more digestible.

I try to do most of my paper dying (tea, coffee, beet juice, food coloring, etc) during the winter when we burn wood for heat. I wait until the fire is just about right (not too intense) then pile the wet paper in disposable aluminum tins on the top of the cast iron wood stove and baby sit it until dry.

For those of you that have not enrolled in one of Nic’s Teachable Classes, you are missing out! I have learned so much from them. Lastly, Nik you mentioned using the paper from Pepin. I am obsessed with it. So beautiful. I ordered the Vincent Van Gogh one, it is exquisite!!!! I hope your feeling good. Hang in there lady.

I have been gluten free for about 10 years now. It was very hard for about the first 3 months or so, but now, it's no big deal at all. With your knowledge of baking, which I did not and still do not possess, you should be just fine. There really are some awesome hacks out there that make gluten free foods almost identical to wheat containing foods. Gluten free has come a long way, even in the decade I've been following this diet. You're gonna be ok!

I love listening to your rambles. I wish I could say I’ve had a productive day, but, this past year plumb tuckered me out and I spent most of the day relaxing. I did think about you last night as I took the time to watch a movie with Micheal Keaton in it. It was “The Dream Team”, it was one of my sisters favorites, so of course she was on my mind as well. One of my least favorite things to do is to tea stain paper. I love the way you do it without an oven. I agree about not having time to babysit the paper in the oven. Knowing my luck I would find a squirrel and burn my hard earned paper and catastrophic things would happen. I’m really glad that we have a new year too. Hopefully it is a real new beginning and not just a continuation of last year. Here’s to a great new year...unless we end up having to just continue counting up from December. That would be awful to have December 354th. Please don’t jinx us that way. Lol! I hope your bread turns out!

Happy Tea Staining!!! I love the idea of the sheet being part of the process... thinking of just coffee and tea staining a sheet. Right now my Dollar Tree cookie sheets stacked on top of each other is my method. I can just spray a few sheets, layering them on plastic lace, etc, and pile the trays up on top of each other until I have no more. In the summer, they are done in a few hours - the benefit of no AC. It takes longer when it is not as hot. I do have a huge cutting table but it has become just one more surface that holds slowly-done projects. :/ I hope your bread recipe is yummy!!!

I love staining paper. I just use plain coffee and bake it but yes, it takes me HOURS. This seems like a more efficient way to do it. Also, I wanted you to know, a little while ago you shared about your recent health challenges and I have pretty bad eczema, especially on my hands, and I was hesitant to get on you tube because of it. Well, one day about a year ago or so, I watched a video of yours where you mentioned that you had some, correct me if I'm wrong, small motor control issues and that gave me courage. I thought, I can be on you tube, even with my eczema. Just wanted you to know that YOU ARE AN INSPIRATION. Thanks so much!

Always enjoy watching your channel and learn something. I wanted to share with you a flour (with gluten) my husband can eat with his intolerance to wheat flour (gluten). Spelt flour from BERLIN BAKERY in Berlin, Ohio is the only place we get the spelt flour (precursor to wheat flour) it is from Germany. Spelt from other sources makes him ill. We use it just like flour. bread, rolls, cakes, pancakes, cobblers, pies. No wheat flour in our home. Hope this is helpful.

Happy new year Nik. Here’s to your health this year. Hopefully now that you know what’s what, you can feel better this year xoxo. I had to cut out gluten for an auto immune disease I have & sorry to be the Debbie downer but I hate being gf. You’re totally right. Nothing is as good as wheat flour. I’m not a huge bread person but I miss pasta and nice breads/fresh soft buns or pizza on occasion. The holidays are the hardest. There is nothing even close :( nothing has that chewy goodness of wheat lol. Plus I’m vegetarian and I used to use gluten for veggie meats (wheat meat! Gluten is high in protein). Anyway enough of my moaning about it. If anyone can find any good recipes it’s you :) yay!! Please keep us posted lol. Nice to listen to your chats as always

Very interesting to add baking soda to cut acid. I was wondering about the acidity of staining paper. For me, your conversation was fun and knowledgeable.
I’m supposed to avoid wheat and have found for store brands of gluten free breads, the further down the ingredient list I find any guar or xanthum gum, the better the texture and the less rubbery the breads. Do you find the same for recipes? I can’t bake bread right now or I’d love to. At one time I baked all my family’s breads. Yum! ;)
Looking forward to seeing your finished paper!

How did your bread work out? I would love a good recipe for gluten free bread, only because like you, I love a good bread. I went gluten free for 6 months (right down to the ingredients in mustard). The neurologist wanted to see if it would help my migraines. Nope, but hubby and I did find a wonderful pancake mix that we loved the flavor of. I was not a pancake person until we tried it and now that's the only mix I buy. Also found I much prefer Nut Thins, almond with light sea salt, crackers. Don't eat any other kind. They are rice based and yummy.

Thanks for sharing! So when you do 3 layers like this how long does it take to air dry?

I think the last tea staining chat was when you got your car . . . a coupla years ago? I haven't cleaned my fridge since last year. (Harhar) I can imagine Marie Kondo asking if your fridge "sparks joy." NO!!! I need gluten!!! Don't try to duplicate your pastry chef days with GF, it will only lead to the taste of sawdusty disappointment. Eventually you'll get over it and find a few good substitutions that aren't too horrible. * Le Sigh * I miss pizza and real pies . . . . :-)
