Excellent recipe Jasper. I remember back in 1994 I was working in a butcher shop, my boss gave me a challenge to come up with a product that would potentially sell like hot cakes. I looked through a bunch of my mums cook books but couldn’t find anything exciting. So I went to work the next day and decided to let inspiration take off. I cut some thin pieces of veal, made a stuffing mix with herbs and pine nuts, bread crumbs and grated Parmesan etc, rolled them up with a couple of toothpicks in each end, put them in the showcase and the next customer to walk in the shop just happened to be Italian. They saw the “Veal Rollups” and they said, “did you make those?” I said yes. They said, “ In Italy we call them Involtini and she then proceeded to tell me how to cook them. I was very grateful for the cooking instructions. Then the customer bought all 20 of them and came back to the shop a couple of days later and said, “they were excellent”. They turned to be a great success. Thanks again for sharing this recipe
