I don't know why but I really appreciate that you didn't edit your dad out of the background when you were cooking. So many people would be rude to parents ask them to leave or refilm for the 'aesthetic'. I find these small bits of respect that you show others and authenticity really calming.
I started watching this video, and I hadn't been outside yet today. When you said you were going for a walk, I immediately stopped the video and braved the cold winter and walked for 45 minutes. Thank you for the reminder how good these walks are for us! I feel much more grounded and happy :)
The year was 1969... it was a memorable childhood experience... I learned how to bake brownies when I was a Brownie. It was love at first bite... because who doesn’t love that gooey chocolate delight? Immy, these comfort treats look hella-delish!! if you put the deseeded vanilla beans in a jar with sugar and stir every few days, you get the most amazing vanilla sugar. Where I live, recipes usually use vanillin/vanilla sugar instead of vanilla extract. You just subtract a tbsp or so from the sugar

I made "chunky monkey" buckwheat groats the other day with cacao nibs, raisins, walnuts and banana of course. Such a warm hug in a bowl. The pear porridge looks wonderful. X
You make cooking seem so relaxing, and I just realized it's because you're not using a microwave! I'd love to start using the stove more, having to be patient while everything cooks, nice and slow. And usually I have the radio on, or headphones playing an audiobook, but I noticed you didn't - that's something I'd like to start doing too... just sitting with my own thoughts, and focusing on the sounds of the chopping or stirring, like my own ASMR session. You're an inspiration, as always. ;)
I’ve found that being cooped up at home has made me really angry and snippy. Very quick to react angrily to every little thing. You’re absolutely right that a good, long, walk clears my mind and improves my attitude...at least for a little while. :)
The used vanilla bean pod in a bottle of vodka/rum is a great tip. Thank-you for this. I must admit that I don’t know what a “tipple” is, but this is a fun little hack and I know what I will be doing with my vanilla bean pod after the baking is done this weekend.

I hope this is a good tip never meant to be rude, didnt know it myself until recently. Always use wooden or metal utensils when using heat, as plastic or silicone does melt. Saw in the winter foods vid stirring with a spatula, which i guess are only meant for mixing without heat. Thank you for your videos! Very relaxing!
Maybe I can help you out a bit with the apron. I don’t know where Immy’s apron is from, but I am a high school sewing teacher from 🇨🇦 and my students make aprons in my classroom. This style of apron is called a “cross back apron”. It is a vintage style of apron that requires no ties or apron strings. If you are a sewist, they are quite easy to make and patterns are available. If sewing is not your thing, you can find them on etsy or in on-line stores.

Ah I hope you feel better too! Yep same it's completelyyyyyy messed me up, but journaling has become really good for me to just get every thought and emotion out. Surprisingly I've found it helps with my mood swings, as well as meditation which I used to hate. I think a good site is the ethical consumer website, they have some good lists and run downs. I always just search 'brand name' then scandal or unethical practices and see if anything comes up. Tbh if a company is ethical then they'll be shouting about it!

Mixed spice is a blend found in the UK! We use it for mince pies, Christmas cake, etc. I live abroad and couldn’t find it, but you can make it pretty easily. It’s very similar to pumpkin pie spice blends, but with the addition of a spice called mace. I made mince pies using a pumpkin pie spice blend and I didn’t really taste a huge difference without the mace, so you can just use that or make your own blend and up the nutmeg slightly.
I, too, noticed the cat’s tail as she faithfully followed Immy into the bathroom. It made me chuckle. It’s the little things in life, like a loyal cat, that are precious 🐱

If you roll out your shortbread on your baking silicon then cut your shapes & remove excess it’s a little easier
