Alex, I remember seeing that show such a long time ago. I always like to do the circles that way. But I have been in a funk at the moment. I will be going to Houston quilt show. I hope you might be there.
I would call that reverse appliqué. You are just sewing from underneath instead of on top. So it is kind of pieced. It is a great technique though. I wouldn’t have ever thought of it!

Interesting but I'd rather applique. Would be so much faster.
Seems like wasting a lot of fabric, cutting away all that on the back piece.
