Like jackfruit, certain parts of the Philippines use santol as a "vegetable" where we cook it with coconut milk, chilies, smoked fish, and sometimes, fatty pork is also added.

I had some of these 2 or 3 orders ago.
They were so nice.
I found the seeds quite difficult as the flesh didn't seem to want to come away from it.
It felt that I was losing fruit left on the seed.
Totally worth trying though!
