  • So, I stole this idea from a RUclips video. Sometimes I am not in the mood to trim my brisket and I wanted to see how it would work out. Now the brisket that I did pick had what seemed to be a low fat cap to start with.
    The brisket turned out really well and was juicy, but the flat was under cooked. I don't think that had anything to do with not trimming it, just the way I cooked it.

    How did you get the brisket fat to taste sweet?

      I think it happens from the overnight hold.

      @brianportnoy5795 my oven goes down to 150. So I put it at 150 cover and let it set.

      @@chinlebbq1 did you have to adjust the oven settings to get to that temperature?

      @brianportnoy5795 No, my over just run that low. I got lucky. Cause when I bought my oven overnight, hold was not a thing to me.
