I have been a longtime fan of NYT Cooking, they've been helping me with the basic and more intricate recipes ever since I started cooking. I wanted to see what the very highest rated, 5-star, most popular vegan dish would be like. This one came as a surprise to me. This Spiced Chickpea Stew With Coconut and Turmeric wasn't what I was expecting but it just might be your new favorite summer dish.

I've made this but amping it up with more spices because as an Indian I don't understand using only turmeric and red pepper flakes and it makes it so much tastier. Like the soup version of curry.

I remember when thus recipe came out back in 2018. I make a modified version of this by adding cauliflower, red pepper, coriander and cumin powder. It makes a banger of a dish! Given the summer heat in Toronto maybe I should make it again.🤔

The suggested yogurt and pita bulk this up. I usually serve with brown rice and add some cauliflower in to get a little extra veggies with my coconut milk. Another great vegan nyt recipe is the sheet pan chili crisp tofu.
everything in this video looked tasty, I had to watch it a couple times because I was a bit distracted/mesmerized the first time.
I think I am going to make this later this week, I am going to add some oyster mushrooms some Daring Vegan Chiqin, and probably some fresh chili peppers.

2 cans of coconut milk is about 100 grams of saturated fat, or 25 grams per serving. That's about double the daily recommended amount by the American Heart Association.
I was never suggesting anyone eat an entire pot of stew in one sitting lol
@@MerleONeal The 25 grams is a 1/4 of it, not the whole thing. The AHA recommendation is to not exceed 13 per day based on a 2000 calorie diet.
This is the issue with a number of vegan recipes calling for coconut milk which is so high in saturated fats. Not sure if the lite would work just as well. My husband has high cholesterol & type 2 diabetes so trying to cook more vegan meals but unfortunately these recipes are to be avoided. 😢
And that's why it's the #1 rated recipe. ;-)
I might try 1 can full fat & 1 can light - still yummy but healthier, & add more veggies. 🥦
I was skeptical of this recipe because it seems too simple, but with your idea of adding tofu, now I have to make this! I could see cauliflower going really well with this soup as well, and to keep it super simple, you could just add riced cauliflower at the end!

Any tips for new vegans and gas?? I'm trying to have a bit of beans everyday and I can't stop farting

That said, if you're new your body might just be adjusting to the fiber- it's been like 8 years for me and I was having issues, for me i think it was the protein

Ah, The Stew. This recipe was a mega-hit when it was first released, hence the 20,000+ reviews. It's delicious.
Ahh, The Stew! I was sooo stew obsessed when Allison published this, I was making it once a week the entire winter, but tbh I kinda forgot about it. Prob cause I do soups & cassaroles when it's cold & salads & chilled food when it's hot
This was a SPLENDID dish!
When you add salt after every step it’s more to develop the flavor of each ingredient than the specificity make it more salty. I really recommend doing that because of how it brings out the flavors of ingredients more and results in more depth of flavor overall.

If you want this thicker, add the coconut milk last after the veggie stock reduced and thickens. I've found that coconut milk gets watery if it's cooked too long.

My doctor has recently told me I'm severely iron and b12 deficient 😞😞. I've been vegetarian for over 20 years... and he's pushing for me to start at least eating seafood which I do NOT want!! Do you have any recommendations and recipes for high iron intake?? I'd love to see them!!! ❤

Hey! I struggled with iron deficiency even before I quit eating meat and took the slow release iron supplements. One of the nurses I worked with suggested I take Vitamin C because it helps the body absorb iron. I tried that and it got better. I also eat a lot a LOT of Spinach which is high in iron. I got better and haven't had any issues with iron again in about a decade.
After I stopped eating dairy (due to high cholesterol and other medical issues at first), that's when I was informed my B12 was low. I had to take B12 shots for a year and then I was better and just kept taking pills per my doctor's advice. I did notice that nutritional yeast has B12 in it. I ate a lot of nutritional yeast before I was informed my B12 was low though so I'm really not sure why my B12 dropped in the first place but I stay on the supplement pill for B12 and the Vitamin C.

Could you replace full-fat coconut milk with like Greek yogurt for those of us who are more calorie-conscious? Or would that impart a tangy flavoring? Thanks Merle!
The flavor would be very different - you also wouldn't get the liquid that you get from coconut milk - you could try some veggie stock and silken tofu instead!

It looks delicious. I would serve it with a side of good bread lightly toasted. As far as bulking it up, I would add potatoes. I need carbs to feel full and too many beans are hard on the GI tract.
