I have two propane ovens. I have added steam injection to the deck oven and in the other oven I just throw a can of water inside when I load the bread.

Love the singing bread!! Would love to have my rye look as good as yours...still trying. What percentage of rye vs white or WW?? I like peasant type breads, esp pumpernickel but am reluctant to use added gluten to lighten it up for other peoples palates. Do you use added gluten to any of your recipes?

35% rye, 65% unbleached white flour. I don't any extra gluten or other additives to any of my bread and feel it is unnecessary.
