We had smoked turkey and then we had an oven roasted turkey, but I like the smoked turkey a lot more. I think the color of the turkey comes out from the seasonings that you use. I love the holidays because family gets together people that you don’t see all year or only see once in a while everyone’s so busy with working life.
The 14.5" Weber Smokey Mountain smoker is $279 at retail. It's a small smoker, but works just fine. I was lucky to score mine at $100 used. I don't use it much since I have the 18.5" and the 22.5" as well, but I got it to round out the family of smokers! I would never throw out a chicken or turkey carcass. All bones from either bird will go into the slow cooker to make a delicious broth which is used as a base to make soup or stew. When you say rice makes your glucose to spike too much, were you measuring it alone? As opposed to as part of a meal with protein and fat? If I recall correctly, 1 1/2 cups of rice have th same amount of carbs as a Costco pizza slice. I wouldn't think there is much difference between rice and bread when it comes to a CGM.

I use the 🍖 bones/carcasses to make broth for cooking and making soups. I make it in a slow cooker, then I freeze it. Glad your turkey 🦃 was good 🦃

Don't know why it spikes it as it does... but it does. It jumps dramatically higher than a slice of pizza would.
