- I used to hate pasta salad until I had the one at my first job as a dishwasher. So today I'll show you how to make the best creamy deli style pasta salad that I ever had and one you'll actually want to eat. This pasta salad is creamy, bright and acidic and full of fresh vegetables, but not too much mayo. The perfect cold pasta recipe for these hot summer days or for any summer cookout.

I'm watching your videos to find sandwich& pasta ideas to prepare for my mom to take with her to work.
She's a nurse and works a lot, so a lot of times she's too tired to prepare something to eat on her break. So I decided to do it for her and she loves everything I made her so far, next recipes on my list are the fried eggplant sandwich, this cold pasta and the fried zucchini pasta. I'll let you know how she likes them.

May I offer a suggestion? I speak from experience of working as a unit secretary in the county hospital with the nursing and physician staff. I used to go down to the cafeteria for lunch (when I had time for lunch) It took me awhile to figure out that high carb lunch is what lead to me totally running out of steam around 3pm. I was literally so tired I would feel like I was falling asleep at the desk, and would then have to down a bunch of coffee to get me to the end of the work day. I eventually figured out that "carb coma" didn't happen when I had something without a lot of bread or pasta: (soup and salad etc....).
That’s the sweetest thing ever!!! I literally have tears! I lost my sons due to different accidents and this melted my heat beyond! 👏

I ABSOLUTELY LOVE that the dressing isn’t forming a pool under. It’s consistent, creamy, yet it doesn’t seem to be overpowering. Thank you for this because everyone else whose channels I’ve seen regarding cold pasta salad seem to put too much dressing and yours was just the right amount. With that you’ve won me over, I’m officially subscribed.
Yes totally agree, other comments were saying ‘too much Mayo’ but it was dressed perfectly for the volume of ingredients

It's not unseasoned tho. If you boil it with a proper amount of salt then, yeah, it's amazing, but try boiling it with no salt (unseasoned)..you will not enjoy. And if you do...well..

@@Hamburgler6.9 properly cooked pasta is cooked in salted water and it's not for the purpose of seasoning the pasta. Salt, in the right amount increases the boiling point of water which is the actual purpose. It cooks too slow and gets too soft before it's al dente without salt. I think that's why he's saying unseasoned, he stipulated "cooked right"

I use dill pickle juice instead of vinegar...my grandma always did it that way and everybody loves it!

This recipe was a hit! It is easy other than the time cutting the veggies. It was so good that my dad brought some to his coworkers and my 12 year old brother liked it.

im more of pasta traditionalist like you, but lately ive been making macaroni salad just like this. goes great with a lot of meals or on its own. i really like adding one jalapeno, some chopped pickle, and a bit of the pickle juice. killer every time! cheers

I like to start with the dressing and then toss the veg into it so they pickle a bit while i make the pasta and let it cool. Also helps with the onion acidity trick you talk about in the video.

Tried this and added Japanese cucumbers too. Used agave nectar to replace sugar as sweetener. So good! Thank you for the recipe!

This is how I make pasta salad. :) The only difference is I pepper mine with halved cherry tomatoes and black olives. YUM.
Good addition I love olives, might try with some fancy Greek kalamata's.
I've NEVER seen carrots in pasta salad. But olives and tomatoes? yes!!

This video is the reason I love this show. Something as simple as pasta salad but cooked to perfection. Anyone can do it, you just need to put down the time and effort.
Little hack for this recipe- put the veg in the dressing for 30 mins or so first, then add it all to the pasta. it almost gives the veg a quick pickling, and makes the dressing just the tiniest bit looser so when the pasta absorbs it it ends up the perfect consistency and the pasta also captures more flavor.
I eat pasta by itself also when I was a little girl. I do the same recipe except I add hard boiled eggs, olives & sometimes raisins. I am with you on the mayo.

Love the way you connected it with pesto, one of the fathers of modern Italian cuisine served pesto with cold pasta, also not washing the pasta with cold water makes for much better taste ❤️ also the mayo reference at the end ❤️❤️❤️
i made this today at my office and everyone liked it! i usually make almost nothing with mayo, butter or high fat ingredients, but that mayo-to-salad ratio was perfect! i guess it's more like 1 cup in the video than 1 1/2 cups of mayo.

I like adding some olives, jalapenos and corn to this mixture and i also put in like a spoon of sriracha too! It comes out with the perfect kick i like with my food.

You gotta try it with salad cream, a product Heinz sells in the UK. It’s like a more vinegary , less rich and thinner mayo. It’s perfect for this and potato salad.

not enough YT folks show examples of macerating alliums before use in a dish. I think thats why a lot of people often think onions and garlic in dishes are too punchy. thanks for this one mate!
The maceration is a good tecnique!
There are also other techniques to blunting certain flavors that are too strong: onions and other vegetables can be blanched (cook quickly in water, eventually with additions of salt, vinegar/lemon, sugar, even in the microwave).
There's a sexy word... maceration.
Okay so I just made this salad and you are 100% correct. The best pasta salad dressing I have ever had including my Sicilian mother's. She has passed so she will never know. Bravo young man, you hit it out of the ball park.
Made it today. Both my Girlfriend and I don't like cold noodles but this recipe was really good. We both ended up finishing the dish today although I planned eating it tomorrow as well. I skipped the Salary because I don't like the taste of eat and just used Salary salt instead.

I made this and let me tell you what, it was the best pasta salad I could imagine I would even next time put more veggies because oh my god it was off the chain. Honestly its quite refreshing to see someone advising others to not DROWN THEIR RECIPES IN SAUCE/DRESSING. So many of these youtubers and tik tokkers are showing disgusting meals just drunched in sauce it's glutinous. This looks amazing though!!!
Just made this and its excellent. I only had seasoned Chinese vinegar but it still worked. I've been trying to get away from meat dishes more and this is the kind of dish that makes me not miss it. Also noticed I did not need to add much salt to it so that's a major bonus too.

I made this. I added some shredded sharp cheese. Makes a complete meal with sliced apples and Asian pears for dessert. Delicious.

This is similar to a “shrimp dip” my grandmother used to make just replace the noodles with shrimp boiled in Cajun shrimp boil and chop in to small pieces. Although I bet the shrimp would be a great addition to your recipe.

I make mine like that! Lots of veg, plus radishes, and some sliced green olives with pimentoes, and put curry powder in the mayo! You just can’t stop eating it!

I've made this several times over the last year. Very good recipe, best I've ever had.
I use a similar recipe, but I blanch the veggies as well. After leaving the salad in the fridge over night the veggies also get a little pickle. Both combined give a nice texture

I wish you would/could just master the art of audio. My only complaint is that you treat your audio levels, much like your measuring techniques. I use the colorful pasta, mayo, 1/2 small bottle zesty Italian, all the veggies you used plus zucinni then... shrimp.

When a friend of mine makes Ropa Vieja she serves it with a simple delicious onion salad. She slices an onion and breaks them up into strands and tosses it with lemon and salt. It’s like magic! - like the vinegar in your salad, the lemon mellows out the onion and makes it sweet.

We make our pasta salad with champagne vinegarette its amazing although the mayo based is definitely a classic
When I am trying to be good...because I could eat mayo straight from the jar...I use a champagne vinaigrette and add like a tablespoon of mayo. It makes it creamy without being super fattening. I also do the same thing for cucumber or tomato salads. You could try it when you're being bad😉
I like the trick with the raw onions. This pasta looks so good. And you even put it on a plate!!
