A traditional and healthy snack recipe made with grated pumpkin / kaddu and spices. it is considered to be filling and also healthy as it steam cooked and not deep fried. it is typically served as a street food snack in gujarat Maharashtra but can be served as side dish or for morning breakfast too.
well the recipe looks very simple and easy to make, but can be overwhelming for many novice cook. perhaps the combination of ingredients used in this recipe can be immense. basically, the ingredients list includes like grated pumpkin jowar flour, Besan flour, Wheat flour, semolina and also Rice flour. when all these ingredients combined in a correct proportion, it results in a great Healthy snack as muthiya. and perhaps for the same reason it is one of the filling and appetite snack. moreover the other best part of this snack is, it has a great shelf life. i personally make this when i have some unattended pumpkin.
Main ingredient require : for Dough
Yellow Pumpkin / kaddu - 2 cups
Jowar flour - 1/3 cup
Besan flour- 1/2 cup
Semolina -1 cup
Wheat flour -1 cup
Green chili - 2 tsp
Ginger -1 tsp
Cilantro -1/2 cup
Turmeric powder -1 tsp
Red chili powder - 1 tsp
Salt -2 tsp
Sugar- 1 tsp
Ajwain -1 tsp
Cumin powder -1 tsp
Lemon juice -1 tsp
Oil. -1/3 cup
Sesame seeds -1 tsp
Curry leaves -10 pieces
Cumin seeds. -1 tsp
Mustard seeds -1 tsp
Asafetida -1 pinch
For tempering
2 tbsp oil
2 tsp mustard seeds
2 tbsp white sesame seeds
8-10 Curry leaves
10 - green chilli
2-3 tbsp water
2 tsp sugar
2 tsp fresh coconut
2 tsp cilantro
कद्दू! - 2 कप कद्दूकस की हुई)
गेहूं का आटा- 1 कप
जोवार का आटा - 1/3 कप
सूजी- 1 कप
बेसन- ½ कप (50 ग्राम)
तेल- 2 से 3 टेबल स्पून
हरा धनिया- 1/2 कप (बारीक कटा हुआ)
नींबू- 1 /2
हींग 1 पिंच
हल्दी पाउडर - ¼ छोटी चम्मच
नमक- ¾ छोटी चम्मच या स्वादानुसार
हरी मिर्च- 2 से 3 (बारीक कटी हुई)
अदरक- ½ इंच टुकडा़ (कद्दूकस किया हुआ) या ½ छोटी चम्मच पेस्ट
जीरा- 1 छोटी चम्मच
तिल- 1 छोटी चम्मच
राई- 1 छोटी चम्मच
नमक - 2 चम्मच
शक्कर - 2 चम्मच!
अजवाइन - 1 चम्मच!
रेड चिली पाउडर -2 चम्मच!
