12/25/23 - He didn’t provide the weight of the pork shoulder; he said he was using the air fryer, but didn’t say at what setting (roast, bake or air fried); the skin was to burnt ruining el cuerito.👎🏽
Looks amazing!! Just one small thing I would point out is that the USDA has changed the pork standard for internal temp to 145 now. I like to go 150. It makes a huge difference on the tenderness and juiciness vs 160+. Especially if there’s any leftovers for the next day
Hahaha cumin is pronounced "Q-men", not "cummin". I'm surprised by the fact that I've heard this mispronounced by adults several times, just in the last year. Never before that though. Lol what happened?
Looks amazing and great job on the mojo recipe. Not sure if it was done because I couldn't see very well but I would recommend putting the fat part up so it can keep the pork juicy while it Cooks :-) looks beautiful! Definitely try it on my air fryer
I just watched this and still can't figure out how dam long the thing actually cooked for. I am guessing about 90 minutes. If you didn't take the dam thing out of the oven so many times, it probable would of cooked in 70 minutes. Not to mention the oven AND roast are cooling every time you take it out. I need to find another/better video for sure!
In my experience with pork shoulder it's just fine at 170 sure but if you go lower in temp with the oven and cook to 200 degrees internal temp it breaks down the collagen and connective tissues making a much more tender and flavorful meat. Honestly I just wanted to see if it could be done in an air fryer it's my first attempt doing it in the air fryer but I've learned the air fryer pretty well now. I'm thinking 340 for two hours
Good video. Do you think it you covered it with some foil for the first half hour, would have prevented the top from crisping up so fast? What was total cook time?
Total cook time was about an hour and 25 minutes. I don’t know if the foil will help, but next time I cook it I’m gonna try it. I’ll let you know how it comes out.
@@caadam1 Thanks for the info. I'm doing one now, but I decided to place it in my slow cooker for an hour to half cook it, then crisp it up in my air fryer 👍🏽
For the big round air fryers the tin foil cover gets stuck to the fan on top 😓... I guess there must be a way to put it correctly to avoid damaging it.
For those who have their own marinade recipe, the air fryer time and temperature are at 8:50. Merry Xmas.

Glad I'm not the only one. Trying to figure this out on Christmas Day. Lol
What kind and size air fryer do you use.?
That's a 10 quart.
It is a black air fryer that convection cook the food. Uses electricity and it can burn your skin.

I do mine to 135 and cover and let it set about 15 minutes.. It goes up to 140-145. (I'm a meat cutter for 45 years.)
170 is way to high
