@@SenorJuan2023You could try fresh spinach. It wouldn't have quite the firm texture of kale, but I think it would be good. You could add on some really crunchy dark lettuce with the spinach.

Just made this and it was excellent! I only had small whole wheat flour tortillas and corn tortillas so mine were more like wraps and soft tacos. The sauces were so good! Thanks!!!
Looks sooo delicious! When I make it, I'll add kala namak to the tofu to make it a little more eggy, and toast the quinoa before cooking to add extra flavor. Can't wait!
Ha! I was thinking the same two things when watching this. I learned about toasting quinoa in another video yesterday, and I bought black salt last year but haven't actually tried using it yet....
I like that last step with the aluminum foil over the heat. Crisping it up looks like it made it slightly less soggy. Been a veggie for 35 years and never a big tofu fan, but I'll have to try this.

That's why I rarely follow recipes. I eat toasted burritos almost every day for one. I eat a lot of beans but if I don't have any I get creative with whatever I have. I make a tofu sauce I invented once a week inmyblender with plant milk, vinegar, and spices. It's my "sourcream" butter for potatoes, creamy salad dressing etc. Just an example of how I simplified it. Lost a ton of weight and no longer need a knee replacement. Don't give up.
Really enjoyed this and the shout out to support local! I had never ate at a vegan joint before and did this summer. Well let me tell you... it was one of the best burritos ive had, and thats saying something because i would get vegan burritos from my work when i was in school! I would always love a burrito and a grapefruit Izze.

I’ll share my “slaw” julienne jicama, mincd cilantro, sour cream or greek style yogurt, squeeze of lime and the zest. It’s my shrimp taco topping. Goes good on a burrito too. And salt n pepper to taste
I love the little trick of wrapping it in foil to keep it all together, when your eyes are way bigger than the wrap (LOL). I've done that and usually end up scraping some of the filling out. But, yes, been there, done that. Now I know I can just leave it overstuffed and wrap it and heat it on all sides in the skillet. Just as a back-up. And that wrap does look yummy

Yes to veggie burritos with no boring rice! I'll definitely be trying this, but might swap the quinoa for crispy cornmeal-crusted sweet potato wedges. Bon Appetit (Epicurious) ran a recipe in October, and the seasonings for the sweet potato wedges included the usual suspects plus nutritional yeast--and fine cornmeal, too. Might be crunchy enough so you can skip the palm-oil fried canned crispy onions.

I often make frozen egg, potato, onion, pepper, & chorizo burritos to take to work for breakfast. Tofu scramble freezes very well, as does plant-based chorizo. The potatoes can be cut into home fries and fried or roasted. Sauté the onion/pepper mix in olive oil. A little shredded vegan cheese is also nice. The most important thing is that all of the ingredients for your burritos are at room temp or cooler prior to assembling. All you need to do there is assemble, wrap them first in some microwave-safe wax paper, next in heavy aluminum foil, bag them, and freeze them. I make small ones so they only take about 2 1/2 minutes to heat up in the office microwave.

Renegade foods makes an amazing one but it's gluten; I realize it's probably an impossible ask but I wonder with some of your food science tricks you could pull it off? Thank you!!

What a great video, I always was lacking a good burrito recipe. Thanks. I don't want to be rude but maybe you could try to reduce the ammount of salt when you prepare food. It is a great lever to get better health and everyone would be amaze of how you get used to lower salt content over time. However as for all habits don't rush it and play bit by bit. Been subscribed to V-sauce for years, just came across this channel. For a moment I thought V-sauce started a cooking channel, especially given the science element to this type of creative cooking.

Yeah you could totally refrigerate the ingredients here!!! I had leftovers and made a burrito the next day!
