Don't sweat it Nina. Nomenclature is something that comes back to you when you get back in the practice. Food service inspectors are never too far in between. When you do have the opportunity to encounter them. Their qualifications far exceed the questions I ask you. Food service inspections typically happen when required or when necessary. Have you experienced any lately?

Obviously he can't post now because he was going for his First Officers. If you can get him on, that would be cool. Not chef related, but definitely yacht related. There is another chef and I'm not putting her name out there because I think she is fake and isn't a yacht chef, but she's heavily tattooed kind of a goth/emo girl with the purple and pink hair, face tattoos, wears all black everything. She says that she is a yacht chef on a 35M based in the Caribbean....but again I think she isn't real. If she is, she would be an interesting interview just to see how she was able to get away with her crap.
"Mathew from work?" Is that the name of a channel? I usually try to get some sort of food related or yacht chef related guest. Or a provisioner, supplier, baker etc. I'd interview a yacht captain, definitely.

It's the summer that's the rough one. Usually the winter is more low key with time between trips. The summer is a grind.
