Breaking news: The world isnt built around ideals of ethics.
Most vegans get their legumes/grains from monocrop agriculture though
....which not only has its own massive environmental problems, it likely kills a handful of smaller mammals/birds/snakes/lizards during the large scale tilling/harvest/processing. ....that's just a fact.
I just don't really think it's reasonable to draw a distinction between a bunch of smaller animals and a cow/sheep or chicken.
You're just getting upset because the death of the cute fluffy animal is front and center, but the death of the family of baby mice/rats or ground nesting birds being minced up In a harvester isn't obvious.
I've thought alot about this and I've come to this conclusion. Unless you are a vegan who manages to live entirely from their own netted hand harvested garden that kills no significant animals apart from insects.....then your position IS NOT ethically superior.
I can live for a few months off a single one of my goats I kill, plus the guilt-free eggs from my hens. Ethically that is more sound than the hundreds of smaller creatures killed by subsisting on beans and grains for a few months.
Also the health argument is debunked. The problem isn't meat, the problem is processed food In general; meat and processed sugars/grains.
The science doesn't agree with you and the ethics don't agree with you.

If you are a vegan for compassionate reasons and are disgusted by eating meat, shouldn't the idea of eating something that strongly resembles meat disgust you? Why not just eat vegetables? The fact that vegans still find things like ultra-processed fake versions of meat appealing, does that not point to the fact that humans are supposed to be eating meat in the first place?
Also, high cholesterol/heart disease/cancer from eating meat is a complete myth.... people have been eating meat without such consequence for thousands of years, until very recently when unnatural factory made pretend food started to be widely consumed
Some people are disgusted with killing animals without necessity, and by that what meat represents. Not the taste

You are you applying a universal blanket statement about all vegans! Why assume that they ALL eat processed mock meat? Thats silly though I agree that mock meats are not great in terms of nutritions, probably
1. It's a tiring talking point that ultra-processed is synonymous with a plant-based diet. Animal eaters strongly consume ultra-processed foods far more than vegans. Just look at the endless aisles of processed frozen junk that's full of meat and dairy.
2. You answered your own question. We are vegan for compassionate reasons, not because we don't like the taste of meat.
3. I would argue that it's not that plant foods look and taste like meat. It's simply that both certain presentations of cooked plants and cooked flesh have similar look and texture. I don't feel that meat gets to be the default way of describing food.
4. The ultra-processed fake meats you are so afraid of were actually not really made for vegans. Most vegans are happy to eat whole plant-based foods. Those meat substitutes were more made for people like you. And it's a shame you don't want to eat them, because-
5. Health outcomes are all that matters. And studies have shown that alternatives like Beyond Meat are healthier than beef.
