Other options (since you have 4 of them): leave the rind on, cut in half and roast with olive oil. Scoop out the flesh and use with onion, garlic, a carrot, some broth and maybe a bit of coconut milk or cream to make a yummy soup. You can roast the seeds with olive oil and salt for a yummy snack or to top your soup. Use roasted flesh to make butternut squash risotto. Also makes for the basis of a delicious pasta sauce. Enjoy!

The best way I’ve found for cutting anything large is a giant knife. I have a 12” chefs knife i actually bought for cutting pizza but it’s the absolute best tool I’ve ever found for cutting watermelons or squash!

I just learned today that if you microwave the squash it will be easy to peel. First use a fork and poke holes in it and then cut off the ends as you did. Then put in the microwave for 3 1/2 minutes (or a little more) and let it cool a little and peel. I haven’t tried it yet but will tomorrow when I do your recipe.
I hope to grow some Butternut squash next year! Until then, I will go shopping for one and make this delicious side dish or dessert. Thanks for showing how to cut and cook one!
