I made this soup tonight and it brought back so many memories. I used a bit more chili paste but maybe the one you used is hotter, and like you I like sour. I didn't have bamboo shoots at home so I used bean sprouts instead and it worked as well, and didn't find seasoned tofu, so I bout smoked. I am in love! SO so simple, yet so tasty and comforting. I think a teaspoon of thai chili flakes will make it spicy enough for me haha Isn't this traditionally made with black fungus/wood ear mushrooms? I think I like shiitake better. Though I saw some fresh black fungus at the market and I think it'd go good here. Always have this as an appetizer/side dish kinda thing when I'm eating out but at home I think it's gonna be the whole meal because I'm lazy. Tofu and egg is enough protein for me. Loved when you added the egg. Just bootiful!
This is my dessert island food....actually, I could probably live on this soup no matter where I am. I make it often for my family with a quick fried rice to go along side. I always make it vegetarian because it tastes just as good and is easier not having to mess with silkening a meat. I like seasoned tofu as well, but if all I have is soft I just scramble it in its package to save another cutting step. I also like to add a bit of shredded carrot to my soup for color. Yum.
Actually, the main hot flavour should comes from white pepper powder instead of chilli paste you used. And we often drizzle sesame oil at the end of cooking process. This soup is a traditional Chinese soup, especially in Shanghai. Every Mum can make this soup at home. Anyway, your soup is awesome! Almost same as my mum cooked for me.

My favorite oriental soup! I always get a cup of this at the restaurant. I've never had it served with meat. I think some shrimp would be good.

I use to live in Houston Texas and down there the Chinese buffet's put lemongrass and shrimp in the hot and sour soup. That just spoiled me.
