    that charge controller used for 12v system is waaaaay too small. your panels can push around 41 amps@12v. Your controller can only direct 15 amps to the battery. You need a 40 amp charge controller otherwise you can pretty much take 3/4 of those panels off and use them for something else.
    If you were switch to a 48v system, then that Charge controller would be fine, just not at 12v

    Unless you are going to live in a shed all you need is an ecoflow solar panel To power 110-volt items from a car's 12-volt battery, you can use an inverter. An inverter converts a car's 12-volt DC power into 120 volts of AC power

      I checked yuor youtube to see examples of how you did that but you dont seem to have any videos.
