Me and my mate happened to be in Florence at the same time so we kept checking your instagram to see where you were eating so we could eat there too lol (not stalking you, just the food). This place was amazing and my first time trying penne alla vodka! Also the sandwiches at all’antico vinaio were legendary

Florence holds the most special place in my heart. The day I visited, we took the train up from Rome. We spent the whole day walking around, looking at David, Ponte Vecchio, Uffizi, everything! And then late at night as the sun was setting, we ordered a bistecca alla'fiorentina, and ten minutes after starting to eat, I got an email that I got into the PhD program of my dreams!! The waiter brought over Limoncello and Grappa and literally took a shot with us to celebrate before just going right back to helping other tables! :) A night I will never forget; this brought me back, love your videos so much dude.

Polpettone literally translates to meatloaf. It means "big meatball" (polpetta means neatball), which is essentially what a meatloaf is if you think about it.

Penne alla vodka is god tier! From what I understand it was actually very popular in Italy in the 1970s-80s. I love how you go into the history of the dishes. Very informative!!

Yes, in fact this is a dish that was "fashionable" by us in Italy in the 1970s-80s. But still it remains a classic even today.
I can tell you that my Mother made it in '78. She was a lush, and wine fell into her sauces, but vodka was not one of them, until it was. In 1978. This is in NYC and my Mother worked in the biz. So do some research on chicken divan, and then come talk to me. HINT.

After my trip to Padova, I completely changed my mind on cream with pasta. I had an incredible pasta dish with porcini mushrooms and speck. It's indeed very important to make sure to eat where the locals do.

Penne alla vodka was a fad in Italy in the late '70s and '80s, as adding cream in many dishes. Today that style of cooking you can find in thematic ironic dinner party with other dishes as strawberry and champagne risotto or scampi cocktail.
PS. Polpettone is litteraly "big meatbal" but it is how we call meatloaf.

Great video and it brought back some memories. I was on holiday in Florence in 2013 and we went to a tiny restaurant and ate a small plate selection of pastas, including a vodka sauce one, and it was incredible. For the life of me I can't remember the name but I've never forgotten it, the food was great.

Wonderful, informative video, as usual. I read about this dish in Florence, too, which surprised me, for I'd only had an awful version of it in California in the early 2000s (it was watery). The way the sauce lacquers the pasta here makes me want to reconsider the dish, as does your endorsement of it.

I was in Florence for 3 days I went to Alla Vecchia Bettola for our last dinner this evening. So glad I went there! The pastas are awesome! We ordered the pasta alla Bettola twice that's how good it was! Thanks for the tips!

I'm actually heading to Italy soon. You are getting me psyched for the trip. Prices seemed high though. Would you say this restaurant was geared towards tourists or towards locals? I suppose anything in the center of Florence is more for tourists. Lived in Prague for a while and even back then in the 90s and early 00s the center became nearly purely for tourists. There were really just a few places around the periphery that served good Czech food at Czech prices.
I just got COVID for the first time ever (I think). Really knocked the crap out of me. Glad to be getting better. Have a good steam/sauna.

Wish I'd seen this prior to my trip through Italy. Should I be so lucky to return, hands on (the reader's sacred manuscript of choice) I will visit this restaurant. But I'm not disappointed. To echo many other comments, any trip through Italy is a lifetime experience!

This is one of my all-time favorite restaurants! LOVE their penne alla bettola. The family also has a food stall at the Mercato Central: Da Nerbone. The panino con bollito (boiled meat sandwiches) are amazing! Please try it if you have a chance!

I’m currently in Florence now visiting some friends who are ex-pats living there. Tonight we went to Alla Vecchia Bettola based on the recommendation from this channel and can confirm the food was spectacular. The staff was super nice even though we were tourists, and the vibe was incredibly lively and fun. They said they are going to take everyone who visits them in Florence

Wish we had found this place years ago - was in Florence before smart phones so got stuck in a lot of tourist trap places which were lousy. I did like the Italian beef sandwiches you could buy in the central market however - they were very tasty!

I had it in Rome in 1985. It was fabulous but they had a twist that no one else does. Yes, it had the onions( maybe they were shallots) the vodka with to deglaze, red pepper flakes, the tomatoes, cream and cheese( probably Parmigiano but could have been Pecorino) the last ingredient was one traditionally served with vodka, caviar, specifically red caviar and a sprinkling more of red pepper flakes. So traditional vodka pairings with Italian pasta. I make it all the time and it always impresses. I sometimes start with pancetta which gives it an added richness but the one at the trattoria didn’t have any as it was served as a first course.
Trattoria Giovanni is also very amazing and south river Arno (less touristy).
I’m so bummed I missed that one! Pasta all’s vodka is a favorite! I miss Italy already!

It's not as popular with younger italians but check out "panna da cucina". I've used it in penne alla baffo.

My favourite restaurant in the world is Vini E Vecchi Sapori in Florence. Just off of Piazza della Signoria. It's a tiny little wine bar where you have to put your name down early to get a table. With a daily changing menu.
I've been to florence twice and eaten there 5 times. Every single dish I've had there is the tastiest version of it i've ever had. It's a super friendly place run by 3 brothers, extremely popular with the locals. (even with its prime location i'd say its about 90% locals 10% tourists)

Was studying architecture in Florence a few years back and our project was in a location close to the park. Me and a group of friends had the most amazing time at this restaurant. The 10 euro house wine special was also too good to pass up

so what is different about it? I've been making your vodka sauce for nearly 4 years and can't really picture how it gets better except maybe the quality of the tomatoes and cream
La Bettola!!!! I go there twice a year for that pasta.
Is prosciutto and melon typical from Italy? Feels like my mother always done this as an entrée like it was quite random. And we're french from Brittany, nothing close to Italy. Of course prosciutto is italian but works well with Parma ham and French Bayonne ham too. Any smoked ham I guess... ^^
This said I took her tagliatelles with a sauce made of tuna, basil (or pesto), garlic and fresh cream random too! It's so good I cook it for myself very often. Same goes with the basic fresh tomato with fresh mozzarella slices. It feels we're so different from italians, apart from the regions of France close to Italy, but we're neighbours and get to enjoy all these products.
Great video as always (I'm part of the quiet majority of subscribers, but felt like throwin a comment tonight. And a huge one! Could be linked with the few drinks I had earlier with my coworkers :). Love those cooking channels that make cuisine exciting. Not only recipes, but also lifestyle. History, context, etc, make cooking and recipes more interesting and exciting.
And, interesting take on rare red meat. I know it sounds often like an heresy in America. But in Europe, especially in France and Italy as far as I know, well done sounds like an ABSOLUTE heresy. Here, anyone who likes meat, not even love, like, red meat must be rare or blue. And tbh, well done cooked kills all the flavors, textures and nutrients... Not even talking about raw meat like tartare or carpaccio that are absolute marvels for the palate. I guess it revolves around safety procedures and proximity from the producer. It's so easy to get safe raw products in Europe. Same goes with our cheeses.
I dare taking the opportunity to share a recipe that not everyone knows maybe. I thought about it while writing about the pasta dish I was mentioning, and couldnt resist to share this other one my mother taught me too, and if only one person passing there try it for the first time it'd be so cool :D
-take some pasta that allows sauce to stick to it. Farfalle are great in my opinion, but your favorite will do the best (always prior your taste). Just boil al dente.
-take chicken or turkey breasts. Cut em to bite size. And throw em in a pan with a little olive oil.
-take some mushrooms. Paris mushrooms work the best for me, just take some that are small bite size (and that taste quite basic/neutral, I don't know how to explain it, sorry for my english, but still have some texture to em). Make sure they already gave most of their water (wetness? sry! my english ^^') and throw them in the pan with the meat when the meat is nearly brown both sides. Or, cook em in another pan, and then pick em up and put em with the meat. They HAVE to give their water before being thrown with the meat.
-roast all that in the pan till cooked.
-throw a good amount of liquid fresh cream in that pan at low heat, very important, so the cream reduces and doesn't make bubbles. Stir during this process with a wooden spoon so the cream gets mixed with all the juices and sucs the meat created. The cream must turn beige/yellowish and thicken. It doesn't take long at all.
-when done, pasta, sauce with meat and shrooms on top, and get prepared for heaven in your mouth and stomach.
-(season at your taste, but the basic salt + pepper is all is needed in my opinion. It just can be a bit tricky as the cream reduces).

But believe me, believe us, the master nations of cuisine and flavors! 😅 Well done is good when it's stewed. Rare and even more blue, are the way to go the rest of the time. Raw, when well prepped is a marvel. No wonder so many nations having more than just decent cuisine go for it. 😬
And about blood? You think well done makes the blood go "POOF"? It's still there. And you're still eating the flesh of a mammal. Open your mind, but above all, allow your taste buds, buddy. I mean, have you ever tasted such delicacy so you can judge so harshly? Don't fly past such amazing food, it would be a shame.
