The beauty of British TV is it rarely does anything to death. Having her as a very occasional guest keeps it fresh and special. Compare that to US TV where they would see viewing figures go up when she's on, have her on all the time, then her appearances would quickly lose their magic.
I had a whole argument in the comments on another copy of this clip where I was being called a moron by multiple people for not seeing that David was referring to himself as a wounded animal that she had a soft spot for. While I still maintain it is unlikely that this was his intention, it is an interesting interpretation.

Her name is Tara McKillop and they met at Brunel University before Lee was famous, there's no real information about who she is or what she does but it does say Lee likes to keep his family life private so its unlikely she'll ever be on. Victoria Mitchell was already a TV personality before she got with David so its different cos she was already in the public eye and obviously her profile raised even higher once she got with him. Tara is obviously not in the media so would probably be reluctant to be on as would Lee be reluctant to have her on.
Loved Clare Balding in this episode. She played off the amazing dynamic between Lee, David and Victoria and had funny little quips and teases at the perfect moments.

How awkward and sad for David.
