I think the 2 hours in-game timer will only be started if you installed the driver seat or left trail arm along with a part that i forgot the name of I also think that you should knock on uncle's door ONLY if you see the van outside, as sometimes uncle works.

I have assembled the driver passenger and the back seats screwed in too and i have waited 10 hours irl hours and no sign of the van.
