If this is a chocolate cake with ganache, how do you store the cake while working on it? Since its such a large cake do you have to keep it in the fridge overnight every day while not working on it? Wont the ganache get soft and pull the fondant down too?

R Duran. When used in food (it's often used in candies and chocolate), it's called E171. You can purchase at cake-suppliers. If it's safe or not, well the opinions vary.
