    *** I also use anchor butter to make ghee, but from this recipe I would eliminate the oil, besan (chick pea flour) and baking powders and instead of coarse sugar icing sugar is preferred. no need for egg or a mixer either.
    ingredients:1.5 cup plain flour,
    3 tbsps semolina,
    1 flat tsp crushed cardamoms (more or less according to taste)
    half cup icing sugar (more or less to personal preference)
    half cup ghee (approx)
    garnish of flaked almonds/pistachios, choc chips, glacé cherries, whatever u fancy!! U can even leave them plain!
    nothing else needed just bung in all dry ingredients together (sift flour first thou). No need to mix sugar and ghee first either.
    Into dry ingredients add the ghee and make into a soft dough, very easily binds together; no need for kneading loads!
    makes about 16 / 18 balls I like them smallish the size of a small egg!
    oven for approx 10-12 mins check after 10 as it’s a very fine line with them being just right or burnt!
    Tip: they will appear raw but if you brown them, they will be burnt, in fact very little colour change is perfect nan kathai,
    If you brown them, the texture of nan kathai will be lost, when you brown them they will be crunchy from the bottom - depends if you like the crunch or not... I like them velvety smooth buttery and soft, evenly cooked so no browning! Delicious recipe thou and simple too 😊 👍

    My Nan Khatai spread and became biscuit like and flat. Any ideas where I went wrong?

      Keep the dough on the side for 10 mins and then shape and bake them. Happened to me once with other biscuits and when I let the dough sit it turned out lovely

    When you add in the flour dont whisk it use your hands it comes out lighter and you'll use less flour as well

      So silly, nothing wrong with the music, it’s just a simple happy kinda melody, why does everything have to be made religious!!?? It’s FOOD!!! everyone can enjoy this! I like the fact she’s used neutral music.. no offence but I hope you understand my point.
