Do you remember eating these vintage snowball cakes back in the day? They are frosted and filled with fluff then covered in pink coconut. These cuties are easy to make and of course are very delicious, making them perfect for any occasion.
Just to be clear, I know I will get some questions about hygiene; I do not run a bakery, if I would, I would have used gloves!

You don't taste it, it just makes it more moist
Mayo is basically just eggs and oil.
These look delicious! But if you were to stick a wooden skewer through them after filling and putting the two halves together, wouldn't it be much easier to just roll them in frosting and then the coconut? As a long-time cake decorater, I've come to love anything that makes a job easier to do and easier to clean up. It also makes it easier when the phone rings just as you get your hands covered with icing, as is usually the case with me. ;)

When I was 5, I remember sitting in the cafeteria opening my Holly Hobbie lunchbox and every once in a while there would be two pink snowballs-one for me and the other to share.

The look delicious, but it seems they are a bit messy to make. I suggest less fluff used, both in the middle and on the outside, and to grab the "balls" with a fork or something before spreading the fluff on the outside. And at the end, drop the ball to a ball filled with the colored coconut and toss around until completely covered.
Did you mean to say, "toss the ball into a BAG with the tinted coconut"?

Mayonnaise is oil and eggs...nothing else, so if you have culinary sense to know that, why question the use of it! I see it in many recipes for cakes....for moisture.
