I bought two of the 16 quarts and I smoke in it with wet maple chips, you can smoke in any roaster oven. The key to this roaster oven is height. I use a 2 inch high baking rack and roasts and meats are just as browned and delicious as a rotisserie. The higher you go, the browner it gets. I made casseroles, rice, cakes, on the rack I made hotdogs and hamburgs, they always come out great. I am lazy so I use cheap $1.00 drip pans from Dollar Tree. There is nothing you cannot make in this thing and it's small, like 2 large crock pots. It measures 22 inches across from handle-to-handle and from the wall to the front it measures 12 inches. I got mine for 20 dollars each from Oster.com on sale. Save some money and soak some chips over night in the fridge.

It keeps the meat moist, at least with the 30 inch smoker I had it was the same way.

@@ZionRanch I bought mine after watching this video. The smoker is amazing, but I sometimes have problems with the smoke going out.
Never had that problem. Mine works flawlessly.
@@ZionRanch I sometimes have to raise the temp to get them to start smoking again. Are you supposed to close the vent or leave it open?
