I pay my bartenders $25/hr then $30/hr for my bar captain and $40/hr for destination (plus hotel, mileage and meal per diem on the destinations).
I pay $175/mo for my commercial kitchen plus $600/yr for food permit and $1000/yr for my liquor license. 😮

Processing fees and cups etc are all business expenses and you should be able to write them off on your taxes unless the tax laws have changed
