I failed to mention I also have a voice acting background, in the end I lost the part and I can't forgive myself for wasting such an opportunity. The bestsausage pizza I've had was on long island, NY they use a deli slicer or mandolin to slice the sausage extra thin. Soooo good. Good pizza uses part skim mozz.
I worked at a pizza shop in Seattle for a few years and we made huge (by the slice) pies, made to order and take and bake. Many people who loved NY pizza would say our pizza, especially the large slices we made for individual slice sales were very similar to NY style pizza. I do feel it's the thinness of the crust/doe, (we used a machine that helped to flatten it, but then we hand tossed it. That in combination with the amount of sauce, cheese and toppings, which is all on the light side, from what you'd assume. Then the oven has to be super hot. We used a conveyer oven, but you have to be careful, as meats, especially peperoni will burn the top of the pizza from all the oils, so you may need to cook it less time. The way you make the doe and proof it matters too, as it needs a couple days to proof. We just used warm tap water, flour, sugar, salt and canola oil, with yeast for our doe. Perhaps the reheating of the slices in the mini ovens up front helped add that extra crispy texture, but we undercooked them initially to ensure they didn't burn in the reheat. I guess It's really experience and what I learned is that the way you make it can be a piece of art, so there is really no perfect way to make a pizza, but you can mess one up if you don't know the basics.
I think it’s the sauce AND the crust! Crust can’t be thick or too chewy and needs the right amount of crisp on the bottom. The sauce as the guy said can’t be overly flavored and has to be made with San marzano tomatoes.

Honesty, as a new yorker who has tried many different places' pizza, I think its the cheese. I love me a good plain cheese pizza and if it has a lot of cheese its just better. (And if its greasy its good)
After all that trying figure out the secret to a good New York pizza, it turned out it was the people who make it there. My personal vote is the sauce and the amount of it. But then again could be the cheese and the amount of that too. The crust is very important too but let's face it you get the first two things right the crust is just along for the ride.
I live in Duluth Minnesota. We only have one or two neighborhood pizza parlors the rest of them are Domino's are Papa John's. So Dylan you are very very right it is the people. I'm 62 years old the last time I had a really good pizza was when I was probably 15 at the local neighborhood Pizza parlor which is now gone😢
