    Why you don't use abrasive paper?

      Sharp knives tend to leave a cleaner finish. Sandpaper tends to rough up fibres, leaving behind open fibres on a microscopic level. It’ll eventually go fluffy when exposed to water and food. Also, there’s something nice about leaving behind the narrative of tool marks!
