Stardew Valley, Garbanzo Quest, and Bread and Fred are some of my wife’s and my favorite co-op games. They’ve been great not only for our fun together, but they also helped her get more comfortable with PC gaming. PS: I do recommend Stardew Valley first if your GF or Wife is new to games unless she is into something else...
i'm not sure about the other games, but Unravel Two can be played online with steam remote play, which is also a plus cause only one person has to buy it
The Trine series are my and my SO's favourite co-op games. The third one was an unfortunate failure, but fortunately Frozen byte managed to recover from that and the fourth and fifth ones are excellent again. Unravel 2 is also great and has a feature for the other player to piggy back on the other if some platforming parts are too hard, but for the most part you can not play it alone.
I played unravel 2 with a friend through remote Play together on steam and only my friend owns the game. So you can actually play that together online too. Also was a very fun game :)
Ark has been my favourite game for years and the story is surprisingly hard hitting. Just, be prepared for a lengthy playthrough... easily 100 hours + on the first map alone.
I'm so glad We Were Here has been gaining some traction, my friend and I played it together a while back and have been chasing that co-op high since. We'll definitely check out these recommendations, thanks :D
Love your content! This is a great reference list to play with a partner. I'll keep it. Also to add to this: CAT QUEST 2 it has cat puns, great combat, a rather deep political world. It's amazing

You've got to try It Takes Two if you haven't played it yet, Juniper. It's the best Co-Op game I've ever played (even though it's not an indiegame).
Also: Steam games with split-screen coop can be played via Steam Remote Play Together from two different PCs and with only one copy of the game
