Really good recipe. If I had to add something, that white part on the chicken is because there isn't enough oil and too much moisture. The white part doesn't touch the skillet and doesn't brown evenly because steam is in the way. I would recommend patting the chicken dry after the salting and before putting it on heat. This will dry the surface more so there's less steam generated. And adding more oil also helps cover more of the surface of the chicken with direct heat so it browns more evenly. But I understand that some people want to use less oil. I made the melt and it was great. Thank you for the idea. It never occurred me before
