I can't find a store bought bread I like. It's frustrating. It's getting me to bake my own which I haven't done for some time. I just can't deal with commercial bread anymore..
An oven thermometer will help you. All ovens get off temp and need to be calibrated. They may have cool or hot spots too unless you are using a convection oven, which I think you are using. The thermometers are not expensive. The moisture in the air may affect the dough, so winter and summer may give you different results if it humid or dry air. The loaves are lovely and look very tasty. Sehr lecker.
I've just stumbled across your video and I love it! I've been helping some friends with music that have been working with a local southern Alberta colony. They have found that after only one generation they have lost a lot of music and musical ability. They are working to gain that back. Which is why I'm messaging. I tried to find the song that you have playing in this video while the scripture is posted. I love the simple harmony in it and I know that the colony would respond well to it. Every oven is different. Every flour is a little bit different, And so is the moisture in the air. The pumpkin would make it a little more dense and so therefore you'll need a few extra minutes for baking. It looks beautiful 💕

Giselle gluten free bread is enough to turn you around the twist 😂 the best I've come up with so far is make the gluten free loaf in the way you would a normal loaf, set the oven just below normal, lower the shelf 1 notch and bake for 20 to 30 mins longer. Doing it like that makes the inside more fluffy and cooked and it doesn't turn out like a brick because it's been in the oven for ages. The other method I'm going to try is a slow cooker method apparently that is great, you cook it for several hours but comes out perfect and fluffy like a regular loaf. I shall let you know how it turns out 😂. Great upload. Keep warm.

Hi Giselle, The gluten free bread looks great, I live in Florida which almost always has super high humidity and never could get bread to come out right on super hot or rainy days. Your weather will sabotage your baking.
If your bread is getting overcooked on the outside and underdone on the inside try turning the oven off and then leaving the bread in the oven for 10 minutes
My mom taught me to tap the bottom of the bread, and if it sounds hollow it is done. But I don't know if that works if you bake with steam. Edit spelling

GF SD Bread: Bake 10° lower for longer? So the outside doesn't get too brown? Or, same temp, bake longer but cover w foil to prevent more browning? Just thoughts... 😉

Are those raw or cooked carrots on the plate? When I was a little kid, I would only eat raw carrots. Cooked carrots are easier to chew. I saw a channel where a bulldog with hands is eating stuff. It is so funny. Sometimes they give him the bill and he psys. Another channel is about a chihuaha called the new guy. The dog has a hard hat on and is like he is a new employee. In one I watched he said he was always buying fast food for the new guy and he never offered to pay. At the end it showed the dog

After watching you for a couple of years, listening closely to you discussing/baking gluten-Free breads, etc, and talking about the growth of the colony, it seems the future of the Hutterite community might rest on expanding the genetic pool by introducing more “outside blood” into the colony. Gluten intolerance is a signal that the genetic pool is too narrow. I am wondering if your community considers the narrow gene pool a difficulty, and if so, what solutions the colony might find acceptable. Thank you.
There are many colonies, they don’t intermarry. I know people who are gluten intolerant and are not from intermarriage. When you become a doctor in this field let me know.

You can use a probe thermometer in bread to check if it is done. If it's close to done it definitely won't make it fall or anything. Usually 88c

Your bread looked lovely. I always insert a thermometer to check doneness. I used to always underbake. You’re looking for 190 F.

you should try using a meat thermometer to test the internal temp of the sourdough loaf . it is the best way to see if the loaf is cooked .

You could check the temp. The Sourdough bread is cooked through at an interior temperature of 205-210 F or 96 - 98 C. It worth trying.
I bake bread by internal temp with an instant read thermometer. Various breads require different temps.
Every oven cooks differently. All you can do is try and try again. 👍

Concerning the bread’s internal doneness…use a thermometer to ✅ for doneness, as Becky(Acre Homestead) does.
