Isn't the pork supposed to be at least four pounds? You mentioned new rules and the only change to the pork rules is that they added pork collars...but it does clearly state that it has to be at least four pounds...trimming the money muscle prior to cooking seems to be "bending" the rules a bit. Not questioning you, just really curious as I can't find the "new rules" about just cooking the MM anywhere.
According to KCBS 2023 rules "Pork is defined as Boston Butt, Boston Roast, Picnic, Collar, and/or whole shoulder." This definition no longer included a minimum weight of 4 pounds. The old rules stated minimum 4 pounds at time of inspection. That has now been deleted from the rule. No weight restriction anymore.
