- Buffalo Chickpea Burger
This chickpea burger is packed with protein, texture and flavour! The panko breading adds a satisfying extra crunch! You can also make this without the breading and this chickpea patty is still really delicious. Let me know how you like to dress this buffalo chickpea burger…
Ingredients:
2 cups chickpeas
½ onion, grated
½ red pepper, chopped small
2 cloves garlic, minced
1 flax egg (1 tbsp ground flax with 3 tbsp water)
3 tsp cumin
1 tsp salt
1 ½ tsp smoke paprika
3 tsp onion powder
3 tbsp hot sauce (I use Frank’s hot sauce)
½ cup crushed corn tortilla chips
Breading (optional):
½ cup flour
½ cup water
2-3 cups panko bread crumbs
Instructions:
Prepare vegetables: Grate half an onion and set aside. Chop red pepper small and set aside. Finally, mince garlic cloves and set aside.
Make up a flax egg by mixing 1 tbsp ground flax with 3 tbsp water.
In a bowl, mash chickpeas but not fully because you want to have some texture to your burger.
Next, add onion, red pepper and garlic to the chickpeas. Then add the flax egg to the chickpeas along with the spices: cumin, smoke paprika, onion powder and salt. Finally, add hot sauce and crushed tortilla chips.
Combine all ingredients so that they are well mixed. Form into patties.
Freeze for approximately 15-20 minutes to firm up chickpea burger patties.
In a separate bowl, make up a batter using the flour and water. Whisk together. Set aside.
In another bowl, add panko crumbs (start with 2 cups) and set aside.
Remove chickpea patties from the freezer.
One at a time, dip the each patty in the batter and shake off excess batter. Following by dipping that patty in the panko breading, making sure to cover the entire patty and place on a parchment lined tray of an air fryer. Spray breaded patty with oil.
Bake in an air fryer for 20 min at 400°F.
Place chickpea burger on a bun and dress as you would like and serve.
Suggestion: My favourite dressing on my burger is a spicy vegan mayo. Whisk together ½ cup vegan mayo, 1 tbsp hot sauce, ½ tsp minced garlic and 1 tbsp lemon juice.
