Hey Ryan, another way to season, mix up mayo, rosemary, and bit of dry rub, slather under skin, careful not to tear skin and all over to finish, superb!!!
If you don't get a clear juice running out when you cut it, you've overcooked it. If the juice isn't clear, you've undercooked it. Your best bet is to just get an instant-read probe thermometer like he uses in the video. You'll want to take it off the heat about 5 degrees early because it will continue to cook after you remove it from the grill.
When I saw the sweet baby rays sauce come out I knew this was a man of good taste.

I've used butter to put under the skin but never tried mayo. Sounds good though! Thanks for the tips I may try that.
