    Thanks for the video Ryan glad you're back. I've also heard it called a butterfly chicken like the person from Australia said. What kind of lump charcoal did you use this time? I know you usually stick with the same brand but I was just curious

    Hey Ryan, another way to season, mix up mayo, rosemary, and bit of dry rub, slather under skin, careful not to tear skin and all over to finish, superb!!!

      I've used butter to put under the skin but never tried mayo. Sounds good though! Thanks for the tips I may try that.

    is there a way to know when it gets dried out, and if you've cooked it too long?

      If you don't get a clear juice running out when you cut it, you've overcooked it. If the juice isn't clear, you've undercooked it. Your best bet is to just get an instant-read probe thermometer like he uses in the video. You'll want to take it off the heat about 5 degrees early because it will continue to cook after you remove it from the grill.

      My mom and dad come from the great state of Louisiana.
      My mom also calls it " butterfly "
