Yes, you can. No, it won't go wrong. Yes, you can reduce the raisins and cherries. But in all, this isn't a vanilla cake recipe and with those changes, the result you'd get would definitely be different from what's in the video.

Hello Joe, if well baked and preserved, it can last for weeks as uniced. For it's best frozen and it can stay for months. I haven't tried lemon zest so I'm not quite sure.

They're quite similar but according to Google.com, here's a better explanation 👇🏼 "Raisins are made from a range of grape varieties. They are dried naturally and are usually the largest of the three. Sultanas are made from seedless green grapes. They are often dipped in a solution prior to drying, which speeds up the process."

They are tastier and more plumpy when they're soaked resulting in a more flavourful cake as opposed to when used dry.
