Fluffy Japanese Soufflé Pancakes 🥞

  • I tried to recreate some fluffy Japanese soufflé pancakes at home. After countless trials and alterations, finally ended up with an amended recipe that gave me rather consistent results to achieve that perfect rounded shape pancakes. These pancakes are delicious, soft and fluffy, like eating a cloud!

    For 3 pancakes, the ingredients are:
    - 2 egg whites
    - 1 egg yolk
    - 10 ml milk
    - 5 ml oil
    - 20 g sugar
    - 15 g plain flour
    - 1/2 tsp vanilla extract
    - 1/2 tsp baking powder
    - 1/2 tsp cream of tartare (can be substituted with white vinegar or lemon juice)
    Notes:
    *For this video, I used double the measures to make 6 pancakes (just in case one batch fails 😅)
    * I based this on Michael Lim's video recipe and tweaked it by changing the ratios and some of the ingredients. For the original recipe: • Japanese Souffle Pancake
    * If you don't have cream of tartare, you can be substitute it with white vinegar or lemon juice)
    * It should take about 5 minutes to achieve stiff peaks for the egg whites using a hand mixer - do not over-beat!
    * Pick a pan that can be fully covered with a lid so that the steam can help your pancakes rise
    * I find the trickiest part is to flip them without breaking them - so make to sure to use a good non-stick pan, remember to oil it, and use a good spatula
    * I cooked the pancakes for about 5 minutes each side on lowest heat (this will vary on your stove and pan, so you'll have to test this out to see what works best)
    * Depending on how you cook them, they may deflate if you overcook or leave them out for a while (like how I left mine to sit for a whole 30 mins to film this video - don't be me 🙄)

    Looks great! My only problem with my soufflé pancakes is keeping them from deflating when they’re on the plate. I even tried heating the plate itself to have it not touch a cool surface. I really don’t know how they did it when I had it in Japan. It didn’t deflate at all whenever I ordered it, just stayed fluffy. I’m pretty sure I mix and add things correctly. Would anyone have any advice?

    You said that you need 1 egg yolk in the description but in the video you are adding two egg yolks in the bowl so shall I add 2 or 1 because I’m confused 😂😂

      2 egg whites and 1 egg yolks to make 3 pancakes!! Sorry it wasn't as clear - I added in the notes that I made double the measure to make 6 pancakes instead :) (just in case one of the batches failed for filming hah!)
