How to Make Beauty Berry Jelly

  • Beauty Berry bushes are beautiful and help keep mosquitoes away! I enjoy their flowers in Summer and colorful berries in Autumn. Eventually, I'd love a whole row of them! :)
    Today I'm sharing a recipe from a local friend who uses these berries to make a vibrant jelly. It tastes very close to rose petal jelly to me..

    I've been making this over 50 years and, I'm set up to make it again tomorrow! Just a heads up, if you make a refrigerator jelly, add a bit of habanero or jalapeno! It's absolutely fantastic on pork.

    if you like these how many of you have ever had Kudzu jelly it is so good and the smell is amazing -made from blooms wash them then boiling water over them let set over night or like 8hrs strain do the same as with these

      they are also known as french mulberry, the indians used the leaves for a type of insect repellant

    Thanks for showing how to make Beauty Berry Jelly. I'm taking a Master Foragers Class and learned about Beauty Berry a few weeks ago. Could you please show how you extracted the juice from the berries. Also how much juice do you need to make the jelly. Thank you.

    I'd never heard of beauty berries either but my friend Alice gave me a jar. It tasted like a cross between plum and something else. It's wonderful. I will grow some bushes come spring.

      To me it tastes almost like spiced cranberry. It's delicious and makes your house smell so good. Definitely great for the fall weather

    Great, Have you ever used gelatin to set your jelly? You don't have to add as much or any sweetness. The care. Try pokeberries jelly, it's great.

      I sure haven't. This year I actually started experimenting with jams instead of jellies using only sugar and no pectin. So far so good! :)
      I'd be careful using pokeberries... They can upset the tummy in a jiffy!

    This I would very much like to try with with the white beauty berry variety.
    I do wonder if substituting coconut butter instead of butter would have similar effect.

      I have no clue on the coconut butter. I may have to try it next time I make jelly to find out.. Let me know how it goes if you beat me to it! :)

    You can start new plants by stem cuttings OR by seeds (easy to grow). Thanks for good video. How do you get the juice? I boiled mine in water for 20-25 minutes and then strained out the liquid. It is a browner color than yours - so pretty. People tell me it is toxic but I'm thinking they don't really know or confused the berries with something that is toxic. Even my county agent said he wouldn't recommend me making jelly. (I think it is because it hasn't been scientifically proven not toxic.)

      I boiled the berries in water then strained the berries out of the liquid. I'm pretty sure that step was in the video but may have not been discussed.. Thanks for watching! :)

    Could I add something like cinnamon to it? Or are there any specific spices that would compliment it?

      It has a honey like flavor. I wouldn't add any spice personally. Try a tad of whatever spice you are thinking with a tbsp on honey before adding to an entire batch of jelly
