Yes. For example, within Windows Explorer, right click over the selected file(s) or folder and select 7Zip | Add to Archive | Set compression level to Store | Enter your Encryption password (twice) | select Ok. That's it. You're good to go.
I was using zarchiver in mobile, it still can shown files name inside encrypted 7z without even put the password, but when o want to open the file like photo or video then password needed

Zip itself has a way to encrypt file and folder names. Just that 7zip software doesn’t support that.
Can I delete the file even if it encrypt?
From within the file manager (or the command line terminal/console), yes - you can delete the encrypted file.
