One thing my husband and I have realized is that we are not prepared for times like this. The first thing we are going to get when we can get out is a generator. That was always an issue for us when we lived in Broken Arrow and had ice storms come through. Hope that your power issue is resolved and doesn’t become something more serious. Oh my goodness Josie ! Thank you for sharing. I'm definitely going to try this next time I have leftover chili. I already make something like it. I start with a 13 X 9 cake pan. I mix up 2 boxes of jiffy corn muffin mix and put it into the greased or sprayed pan. Then I add the cut up hot dog pieces into the pan, pressing them into the batter. I bake that at 350• F, until the corn bread is almost done. Then I pour my chili on top and cook it until the chili is hot and the cornbread has finished baking. Then I top it with shredded cheese, put it back into the oven and either turn it to broil to get a nice color on the cheese, or if I'm being lazy I simply turn the oven off and let the residual heat melt the cheese. This is a BIG hit with the family. GOD bless you and your house abundantly.
