Same here, Feroza. In 5 days’ time, it will be two years since my darling mum has been gone. Been so overwhelmed with grief that I’ve drawn a blank on virtually everything she taught me. Before she passed, we had found Ria’s channel here on YT and she remarked on how similar their style of cooking was (she even subscribed!). Clean forgot about this until I decided to look for a specific recipe today that I just can’t get right and came across @cookingwithria again! It’s a sign! Thank you, Ria. Keep making these videos. My memory is returning. So grateful 💕

Wow!!! The stew chicken took on the perfect colour; just the way I like it... Browning the sugar is really down to a science, which comes with years of practice to perfect... (Okay not years; clearly I’m being dramatic, but some practice nonetheless)... But yes, it can easily go south if one is not knowledgeable about the procedure. (Geee, sounds like I’m talking about surgery lol!!!)... But yeah, none of that pre-made browning from the bottle, no offence to anyone... Like you Rita, I like a little sweetness to my stew chicken as well, and do add some ketchup, but since I’m not a risk taker like you I tend to add the ketchup directly on to the chicken right before pouring it the caramelizing sugar... All that said, amazing vid... Everything looks scrumptious as usual 👍🏽👍🏽👌🏽. I imagine chewing on the bones of that stew chicken is what dreams are made of lol...
My favorite Trini Sunday lunch, just missing the macaroni pie. 4:10 a.m , got hungry watching this fabulous meal, eating crackers and tea, that's not funny Ria, got to move to New York, lol, blessings to you and birdie. ♡♡

How do you get the sugar so dark without the burnt taste? I tried throwing the chicken in before it turned dark and it was too sweet
Just be a little patient and allow it to cook longer. Must froth, bubble, expand, darken!
