We used 65lbs Crawfish, 6lbs shrimp. 5lbs sausage and veggies as shown. Feed 20 adults and kids with 8 bs left over. TRULY AMAZING.

Sorry for the late reply. The recipe calls for 1 sack but you can get away with a sack and a half like under 50lbs. That's why you don't see me use the basket is because I can cheat and add more crawfish in the pot using the same recipe with the same result. I let them purge for about 15 minutes dump the dirty water, refill it with clean tap water and repeat the process for 3 or 4 times to let the crawfish let it out of their system. Adding salt to the purge only increases their mortality because they are freshwater crustacean. Let me know if you need help. Thanks so much for watching!

I have to say you have inspired me to learn more about my favorite Spring/Summer dish! I made your boil for Memorial Day. Folks loved it and we gave you the kudos with toasts to you. But after that, I had to put away my 36 Quart pot and get a new 60 quart pot! The other one was too darn small. 😡 After watching this video, I should have opted for the 80 quart! 🤣🤣🤣. Also, because of you I experimented with certain ingredients. I prefer to use the Zatarain's Pro Boil because it has less salt. (I sometimes use Swamp Dust and Slap Yo' Mamma, but those are more salty.) I also opted for Land O' Lakes Margarine because it is higher in fat than most. This video is key because you actually show when you put in everything and at what time. I would like to see other videos with crawfish with other preparations, i.e., the Vietnamese style butter sauce or the garlic crawfish, Savannah style, which I am clear you can Ace. After all you re the King of Crawfish boils. 🦐🦐🦐🦀🦀🦀🤣🤣🤣🤣😝😝😝
Mushrooms go in before the crawfish they take a while to cook and also shut that fire off as soon as it starts to boil again or they will over cook. Then immediately start cooling the pot on the outside with the water hose down to 150F. The ice dilutes the seasonings! You also overloaded the pot. After about 20 minutes and they have sunk then pull out a crawfish as a tester. If it suits you then pull them if not soak another 10 minutes and test until they suit your liking! Nice job for a rookie!

I have followed this recipe two times and it has come out great both times. Second time people said it was the best crawfish they ever had. I did also put in fish sauce and lemon grass for more viet flavor. Thanks for the awesome video it really helped us do it up right!
That does look good. The addition of the ice is a new one on me. Have you thought about drilling a hole at the bottom of those boilers? Tap the holes and insert a brass valve so draining the water might be a little easier?

The only thing u get when u "purge" is the stomach contents --- and we do not eat the stomach. To successfully purge a crawfish, it has to be in circulating water for a day or so and then the entire contents are eliminated including the gut. It is necessary to clean the crawfish in fresh water to eliminate debris & mud and maybe leftover bait & small vegetation.

Thank you very much! I think l liked your recipe better than other cooks. I have frozen unseasoned crawfish, corn, 🍊 sausage, butter, dried cajun powder, sweet onion, garlic powder. Will need to get head on shrimps, celery, 🍋 dried crab boiled and crawfish boiled powder and cayenne powder. Your recipe would be used this weekend as for my nice boss’s birthday.

I’m from Louisiana and we get 6 gallons of zatarans
I have followed this recipe two times and it has come out great both times. Second time people said it was the best crawfish they ever had. I did also put in fish sauce and lemon grass for more viet flavor. Thanks for the awesome video it really helped us do it up right!

That does look good. The addition of the ice is a new one on me. Have you thought about drilling a hole at the bottom of those boilers? Tap the holes and insert a brass valve so draining the water might be a little easier?

The only thing u get when u "purge" is the stomach contents --- and we do not eat the stomach. To successfully purge a crawfish, it has to be in circulating water for a day or so and then the entire contents are eliminated including the gut. It is necessary to clean the crawfish in fresh water to eliminate debris & mud and maybe leftover bait & small vegetation.
